In accordance with one aspect of the present disclosure, a cooking apparatus includes at least one heater and a heat transfer regulator provided to face the at least one heater and provided with a plurality of regions each having a different reflectance against heat generated by the at least one heater.

A method is disclosed for cooking food in an oven cavity, where airis the cooking medium. Using a predetermined cooking algorithm, a temperature of the oven cavity is adjusted in a plurality of temperature and/or time regulated cooking stages. An initial pre-heat stage targets a first target temperature including a user-selected oven cavity temperature plus a first offset. A subsequent post-heat stage targets a second target temperature including the user-selected temperature plus a second offset different from the first offset. Two or more heating elements and a fan are operated during the post-heat stage according to a duty cycle controlled via a hysteresis temperature control algorithm or a PID temperature control algorithm.

An oven firebox is formed in the framework assembly and suspended above the fireplace firebox. A chimney flue is disposed above the oven firebox in the framework assembly. The framework assembly is covered by a refractory heat resistant mortar. The fireplace firebox has an aperture. The system also has a gas line disposed in the framework assembly below the aperture. The gas line is configured to connect the aperture with a gaseous fuel source. A burner pan may be disposed in the aperture.

Oven appliance and methods of operation

An oven appliance and method of operation are provided herein. The oven appliance may include a cabinet defining an oven cavity, a heat source disposed within the oven cavity, an acoustic wave reader, a surface acoustic wave (SAW) temperature sensor receivable within the oven cavity, and a controller in operable communication with the acoustic wave reader. The controller may be configured to initiate a sensor protection sequence. The sensor protection sequence may include initiating a preset oven cycle of the heat source, and monitoring the oven cavity for a condition signal in response to the initiated oven cycle. The sensor protection sequence may further include determining a state of the SAW temperature sensor based on the monitoring, and halting the preset oven cycle based on a determined cavity-enclosed state of the SAW temperature sensor within the oven cavity.
