A steam generator includes a water storage chamber that stores water and at least one heating portion that heats the water in the water storage chamber to generate steam. A water supply device supplies water into the water storage chamber. A plurality of fins are provided in the water storage chamber. The water storage chamber has a steam spout port from which the steam generated by the heating portion spouts. The plurality of fins extend along a steam-generating direction under the steam spout port, and are separated from each other and cross the heating portion. The heating portion may be above and below a water surface that emerges in the water storage chamber during heating.

A conveyor oven according to some embodiments has a first mode and a second mode of operation and includes a tunnel in which food is cooked, a conveyor for moving the food through the tunnel, a first set and a second set of one or more burners, each set configured to generate heat for the tunnel, and a controller responsive to the detection of an absence of food in the tunnel, the controller configured to change operation of the first set of one or more burners and the second set of one or more burners from the first mode of operation to the second mode of operation based at least in part upon the detection of the absence of food product from the tunnel.

A cooking device may include a refractory oven and a housing. The refractory oven may define a cooking chamber that may be configured to receive thermal energy from an external heat source. The refractory oven may further define an opening configured to allow foodstuffs to be introduced into the cooking chamber. The refractory oven may be further configured to substantially surround the foodstuffs while the foodstuffs are positioned inside the cooking chamber. The housing may at least partially surround the refractory oven. The housing and the refractory oven may define a heated volume between an external surface of the refractory oven and an internal surface of the housing. The heated volume may be configured to receive thermal energy from the external heat source and to reduce transfer of thermal energy from the cooking chamber through refractory oven.

An oven appliance includes a baking stone positioned within a housing at a bottom portion of a cooking chamber. A baffle is positioned within the housing below a lower heating element array. The baffle includes an upper plate and a lower plate. Holes of the upper plate are offset from holes of the lower plate. The holes of the lower plate are contiguous with a regulating air duct of the housing such that a flow of air enters the baffle through the holes of the lower plate. Regulating air exits the holes of the upper plate and is impinged onto a bottom surface of the baking stone in a pattern to regulate baking stone temperature.
