Device for processing dough, comprising at least one transporting conveyor having a transport surface for transporting a first dough sheet, at least one feed line, for feeding at least a second dough sheet onto the first dough sheet, thus forming a multi-layered dough sheet, and at least one incision maker with a pattern of protruding blades for cutting a pattern of incisions in at least one of the dough sheets, the protruding blades movable with a directional component towards and from the direction of the transport surface and a cutting station for cutting the multi-layered dough sheet into dough pieces and a rolling station for rolling up the cut out dough pieces.

A rotary dough molding machine (10). The machine has a frame (6), a die roller (4) and a feed roller (5) rotatably mounted to the frame (6) and an adjuster that adjusts the gap between die roller (4) and feed roller (5), wherein one of the rollers (4, 5), is an adjustable roller, which is movable relative to the frame (6) by the adjuster. The adjusting has a first drive (1) acting on the first end (51) of the adjustable roller (5) causing a movement of said first end (51) in a first direction (x) transverse to the rotational axis (50) of the adjustable roller (5), and a second drive (2) acting on the second end (52) of the adjustable roller (5) causing a movement of said second end (52) in a second direction (x′) that is essentially parallel to the first direction (x). The first drive (1) and the second drive (2) can be actuated independently of each other.

The technology as disclosed and claimed provides a dough based crust or other dough based item that is a protein enriched alternative to conventional breads and crusts and other dough based products. This invention results in a dough that has more protein, more complete protein, and fewer carbohydrates than conventional wheat doughs/breads.
METHOD FOR SEVERING DOUGH PORTIONS FROM A DOUGH MASS
A method for severing a dough portion from a dough mass by a dough portioning device having a container, a first portioning roller having a plurality of severing edges and a second portioning roller having a plurality of severing edges, wherein a depression is respectively provided between two severing edges. The method comprises rotating the first and second portioning rollers into a receiving position, and receiving a part of the dough mass in two depressions of the first and second portioning rollers facing the container. The method further comprises rotating the first and second portioning rollers into a waiting position, decreasing rotational speeds of the first and second portioning rollers, waiting for a waiting time to elapse and increasing the rotational speeds of the first and second portioning rollers and rotating the first and second portioning rollers into a severing position.

SCORED PRETZEL BITE APPARATUS AND METHOD
A method of making a soft pretzel bite includes cutting a series of transverse slots on one lateral side of a dough strip, curling the transverse slotted dough strip into a respective rolled dough strip, exposing each transverse slot, and transversely cutting each rolled dough strip into dough bites. The method includes washing each dough bite in a caustic solution with the length of each transverse slot being sufficient for excess caustic solution to drain way from the dough bite. The dough bite is baked into a pretzel bite. Each transverse slot allows a volume of the pretzel bite to increase without being constrained by a pretzel skin formed around each transverse slot to aerate an interior of each pretzel bite.
