Dough-portioning apparatus
A multi-row dough-portioning apparatus has a chamber housing having a number of portioning chambers for predetermining a portioned quantity of dough. Measuring pistons can each be displaced in the portioning chambers along a displacement direction between a retracted, measuring position and a pushed-out, ejecting position. A rotation-prevention bar is installed in a releasable manner on a rear wall of the chamber housing and interacts with a circumferential recess in the measuring pistons in order to prevent rotation of the same. The chamber housing has a projecting section, which projects beyond the rear housing wall. The rotation-prevention bar is installed on the chamber housing such that, upon release, it can be removed from the chamber housing in a removal direction perpendicular to the displacement direction of the measuring pistons. This results in a dough-portioning apparatus which, even in the case of large-volume portioning chambers, is easy to maintain and clean.
System and apparatus for controlling blistering
A system and method for controlling blisters. The method begins by mixing the ingredients to form a dough with a moisture content between about 35% and 60%. The dough is sheeted and cut. Thereafter, the dough is pre-heated to reduce the moisture content to between about 10% and about 45%. The preforms are then docked and dehydrated. The docking system, in one embodiment, has a backing plate and a docking device with at least two docking pins of varying lengths. The docking device is adjustable relative to the backing plate. The system also has a removing plate which removes preforms from the docking pins.
System and apparatus for controlling blistering
A system and method for controlling blisters. The method begins by mixing the ingredients to form a dough with a moisture content between about 35% and 60%. The dough is sheeted and cut. Thereafter, the dough is pre-heated to reduce the moisture content to between about 10% and about 45%. The preforms are then docked and dehydrated. The docking system, in one embodiment, has a backing plate and a docking device with at least two docking pins of varying lengths. The docking device is adjustable relative to the backing plate. SCORED PRETZEL BITE APPARATUS AND METHOD
A method of making a soft pretzel bite includes cutting a series of transverse slots on one lateral side of a dough strip, curling the transverse slotted dough strip into a respective rolled dough strip, exposing each transverse slot, and transversely cutting each rolled dough strip into dough bites. The method includes washing each dough bite in a caustic solution with the length of each transverse slot being sufficient for excess caustic solution to drain way from the dough bite. The dough bite is baked into a pretzel bite. Each transverse slot allows a volume of the pretzel bite to increase without being constrained by a pretzel skin formed around each transverse slot to aerate an interior of each pretzel bite.

The present invention relates to a device for weighing dough, comprising an endless conveyor, for conveying a plurality of endless or continuous dough pieces extending essentially in parallel lanes on said conveyor in a direction of conveyance, a weighing-unit, arranged under the endless conveyor, characterised in that the weighing unit comprises multiple weighing rows, spread over the width of the conveyor, each row comprising at least one rectangular weighing section, for independently of the other weighing sections weighing a different dough piece of said plurality of endless or continuous dough pieces. The roll sheet is transported in a first direction with a conveyor system, and the roll sheet is rolled in a second direction to form a continuous roll. The second direction is not parallel to the first direction. The continuous roll is cut to form a plurality of rolls. Each of the plurality of rolls is asymmetrical.
