Method and moulding devices for moulding three-dimensional products

The invention provides a method for moulding three-dimensional products from a mass of foodstuff starting materials which are suitable for consumption, in particular a meat mass. The method comprises the steps of filling a mould cavity, which is open on one side, with the mass of foodstuff starting materials which are suitable for consumption, which mould cavity is defined by a boundary comprising walls and base, in order to mould a moulded three-dimensional product, and the removal of the moulded three-dimensional product from the mould cavity. In the method according to the invention, during removal the adhesion forces between the moulded product and the boundary are eliminated virtually simultaneously along all the interfaces.

A method of moulding products from a mass of food stuff. The method includes providing a pump, which pumps the mass towards a mould member, providing detection means, which detects unwanted objects in the mass, removing a portion of the mass via a valve in case an unwanted object is detected, moving a mould cavity, which is part of the mould member past a feed channel, wherein the feed channel is connected to a feed pump, filling the mass into the mould cavity to form a product until a predetermined filling pressure is reached, ejecting a gas through a porous sidewall and/or a porous bottom of the mould cavity to eject the product, wherein no ejection gas is provided when the predetermined filling pressure has not been reached.

Microwave-Coupled 3D Printing System and Equipment for Food Design and Production

Disclosed are 3D printing equipment, a system, and a method for food design and production, belonging to the field of food technologies. A bipolar microwave heating antenna is disposed, to implement focused heating on a material in an extrusion nozzle. In addition, the bipolar microwave heating antenna breaks through a traditional multi-mode cavity heating method, thereby greatly reducing a volume of a heating cavity and facilitating integration with a desktop 3D printer. A microwave switch is controlled by using an extrusion instruction to achieve synchronization between extrusion and heating, and improve heating uniformity. Through joint operations of a 3D scanner, slicing software, and a 3D printer, processes of model making, slicing, and 3D printing are integrated. The microwave-coupled 3D printing system and equipment for food design and production provided in the present invention can quickly and centrally heat the material in the extrusion nozzle to instantly cure the extruded material, so that the extruded material has high mechanical strength, thereby improving modeling quality of a printed product, and effectively resolving problems of deformation, collapse, and the like of the printed product.

PRESSING DEVICE

A pressing device for pressing meat products, in particular frozen and/or partly frozen meat products, preferably fresh meat products and/or bacon, comprises a pressing chamber which extends along a longitudinal axis and into which a product to be pressed can be inserted, wherein the pressing chamber comprises at least one counter-element and at least one contact element, which is movable in the direction of the counter-element, that cooperate such that the product inserted into the pressing chamber can be compressed between the at least one counter-element and the at least one contact element; and wherein the pressing device comprises at least one servomotor that is configured to move the at least one contact element.

The uncooked patty is precooked to form a precooked patty having a skin of depth D comprising denatured protein. The skin is formed on at least an area on the outside of the precooked patty. At least a first portion of the meat product disposed beneath said skin is at approximately T1. The precooked patty is cooked to form a cooked patty, wherein said at least a first portion of the meat product is at a temperature T2.
