A massaging press roller for tenderizing a food product includes a shaft and at least one roller element disposed on the shaft. The at least one roller element is configured to impart a pulsating pounding action on a food product.
MEAT INJECTION DEVICE
An injection device for injecting a liquid into meat includes a housing, a conveyor, and a modular needle bridge arranged above and across an endless belt conveying surface of the conveyor. A drive system is provided to move the conveying surface in at least two opposite conveying directions. The needle bridge has vertically stacked needle bridge blocks with aligning means, and needle head cavities of a non-circular cross-section for receiving correspondingly shaped needle heads with hollow injection needles that can move vertically in the needle head cavities. The needle head cavities are arranged in rows to form a continuous regular injection pattern.
Systems and methods for providing food intervention and tenderization
Systems and methods for providing food intervention, pumping up, and tenderization are discussed. While such systems can include any suitable component, in some cases, they include a needleless spray nozzle head that injects injectate into food without requiring the head to contact the food. In some cases, the head comprises an elongated needleless spray bar that defines multiple internal fluid channels that extend from a first end to a second end of the spray bar. In some cases, the head comprises a manifold system with a first manifold portion at the first end and a second manifold portion at the second end of the spray bar. In some cases, the first manifold portion directs the injectate towards the second end, and the second manifold portion directs the injectate towards the first end of the elongated needleless spray bar. Other implementations are described.
Enclosed and collapsible meat tenderizer
A lidded collapsible tub receives meat, and includes a hole in the lid through which a hand-driven tenderizer may repeatedly strike the meat during manual operation, using a piston-like action while the chef holds a rod. Because the container is sealed and walled, there is no splatter. The rod is also hinged, to promote efficient storage after cleaning.
DUAL TRIMMER FOODSTUFF PROCESSING LINE SYSTEMS AND METHODS
A process that includes receiving, by a first trimmer via a conveyor system, a foodstuff and automatically trimming, by the first trimmer and based on first trimming instructions, the foodstuff that results in first trimmings and a trimmed foodstuff. An injector receives the trimmed foodstuff and injects, based on injection instructions, a liquid solution into the trimmed foodstuff to generate an injected foodstuff. A cooker receives the injected foodstuff and cooks, based on cooking instructions, the injected foodstuff that results in a cooked foodstuff. A chiller receives the cooked foodstuff and chills the cooked foodstuff that results in a chilled foodstuff. A second trimmer receives the chilled foodstuff and automatically trims, based on second trimming instructions, the foodstuff that results in second trimmings and a trimmed chilled foodstuff. The second trimmer advances, via the conveyor system, the trimmed chilled foodstuff out of the second trimmer.
Food tenderizer sleeve and method of use
A food tenderizer sleeve and method of use is provided. The food tenderizer sleeve includes two end collars and segmented and split cutting blade sleeves, which are easy to remove, replace, and clean. In some embodiments, the segments of the cutting blade sleeves form generally a half-circle cross-sectional shape and mount a plurality of cutting blades and spacers between the cutting blades. In some embodiments, the segments include one end with male connection tabs and a second end with female tab receivers for connection to another segment or to an end collar. Each cutting blade sleeve segment is further configured for matching up with another sleeve segment to form a tube or sleeve shape configured to fit around a rotational drive shaft.

A BRINE INJECTION MACHINE FOR INJECTING BRINE TO MEAT PIECES AND A METHOD FOR OPERATING THE SAME
A brine injection machine for injecting brine to meat pieces is provided. The machine comprises an auxiliary frame (10) configured to carry a pre-filtering unit (6), and a pre-filtered brine tank (7), the auxiliary frame being detachable with regard to the main frame (1). At least one level sensors (32) is configured for detecting an amount of pre-filtered brine in the pre-filtered brine tank (7), and an electronic control device is configured for controlling the brine injection operation as a function of the amount of pre-filtered brine in the pre-filtered brine tank (7) that can be recycled, as detected by the at least one level sensor (32) at the end of a brine injection cycle. It is also disclosed a method for operating a brine injection machine according to the invention.
SYSTEMS AND METHODS FOR PROVIDING FOOD INTERVENTION AND TENDERIZATION

Multi-directional cut tenderizing assembly
An assembly structured to tenderize food during a single pass along a path of travel including one or more processing sections each including two rotatable cutting rollers. Each cutting roller comprises a plurality of blades rotatable therewith and having a cutting edge disposed to penetrate the food cutting during rotation of the cutting rollers, wherein the plurality of cutting blades and corresponding ones of the cutting edges are cooperatively oriented to perform at least a bi-directional cut on the food product during the single pass thereof along the path of travel.
