Apparatus for processing and grading food articles and related methods
This disclosure relates to apparatuses and methods for processing and grading food articles. For example, provided herein is a system for grading a portioned food article, in which the system includes: a first conveyor; a first receiving conveyor and a second receiving conveyor, defining a space therebetween; at least one spray-removal robot; and a third receiving conveyor. The spray-removal robot may include at least one valve with a nozzle, in which the valve ejects fluid through the nozzle to impact a food article being moved on the first conveyor toward the third receiving conveyor, such that at least one portion of the food article is moved by the impact through the space between the first receiving conveyor and the second receiving conveyor, and such that at least one portion of the food article is moved by the first receiving conveyor and the second receiving conveyor to the third receiving conveyor.
Method for bone scan in meat
A method and device for detection of bone in meat identifies fragments larger than about 1 mm using spectral optical imaging and ultrasound. Spectral imaging can detect foreign material proximate to the surface and ultrasound can detect material within the sample. The sample is irradiated by light and reflected light or Raman scattered light measured. The sample is similarly irradiated by ultrasound and reflected or transmitted sound waves give a set of amplitude data points, which include temporal delay. These data points are then processed by statistical methods to derive a set of vectors in n-dimensional space, which are compared to a calibrated data set of derived vectors which have distinct identifying loci for each type of surface, are indicative of the presence or absence of defects.
Meat injector
A handheld injector is provided for injecting liquid, such as flavoring or basting material, into meat or poultry. The injector includes a pistol-shaped housing which encloses a battery-powered motor for constant-rate delivery of liquid from a peristaltic pump. The injector also includes a fluid conduit within the housing through which liquid is pumped from a reservoir of liquid to a needle for injection into the meat.
Meat shredder for empanada meats and other dishes
A machine for manual action that releases, shreds or defrays the different fibers of meat for human consumption, be it chicken, beef, pork or any other suitable animals that have fibers. These are characterized by having a bar of different shapes located on the periphery of a shaft which has a handle for manual action so that when the operator turns the handle, bars that are located linearly and equidistant on an axis rotate so that the meat pieces located in the tray enter through an opening and collide between the bars inside the casing. The rotating and fixed bars swivel between said bars and rods, allowing the bars to rotate without colliding or crossing. Through this movement, the pieces of meat are shredded or defrayed in different sizes, depending on the distance and speed between the linear bars moving and those that are fixed. Note the system may also work with either reduction gears and or a reduction motor. This shredder may be attached to the table via a vise or similar mechanism.

TARGETING FOR VACUUM-BASED ENGAGEMENT TOOLS
A system includes an engagement tool (100) having a suction device (224), a movement system (166) configured to move the engagement tool (100), an imaging system (316) configured to capture an image of a surface of a meat product (202), and a computing device. The computing device is configured to (i) determine, from the image of the surface of the meat product (202), a target region (2061) on the surface of the meat product (202) based on an estimated fat content in the meat product (202) at the target region (2061), (ii) cause the movement system to move the engagement tool (100) with respect to the meat product (202) such that the suction device (224) engages the target region (2061), and (iii) initiate a vacuum within the suction device (224) such that the engagement tool (100) exerts a force on the target region of the surface of the meat product (202) at the suction device (224).
SHREDDER DEVICE FOR FOODSTUFFS
A shredder device including a feed hopper, a screw conveyor and a shredder module, wherein the screw conveyor includes a screw conveyor shaft driven by a screw conveyor motor unit and having a screw conveyor flight formed thereon, and the shredder module includes a cutting drum having cutting openings formed therein, and a main screw rotatably arranged in the shredder module and having a main screw shaft, which is driven by a main screw motor unit, and a main screw flight which is formed thereon and passes over the cutting openings. The shredder device enables a higher cutting capacity. The main screw shaft is coaxially enclosed by the screw conveyor shaft inside the feed hopper up to the shredder module.
SYSTEMS AND METHODS FOR PROVIDING FOOD INTERVENTION AND TENDERIZATION
Systems and methods for providing food intervention, pumping up, and tenderization are discussed. While such systems can include any suitable component, in some cases, they include a needleless spray nozzle head that injects injectade into food without requiring the head to contact the food. In some cases, the head comprises an elongated needleless spray bar that defines multiple internal fluid channels that extend from a first end to a second end of the spray bar. In some cases, the head comprises a manifold system with a first manifold portion at the first end and a second manifold portion at the second end of the spray bar. In some cases, the first manifold portion directs the injectade towards the second end, and the second manifold portion directs the injectade towards the first end of the elongated needleless spray bar. Other implementations are described.
SYSTEM FOR TREATING WHOLE MEAT MATERIAL AND GRINDING WHOLE MEAT MATERIAL INTO GROUND MEAT PRODUCT
A system for treating whole meat material and grinding whole meat material into ground meat product includes a microbial treatment station including a hopper into which whole meat material is deposited, a conveyor which conveys the whole meat material, and a microbial intervention apparatus configured to treat the whole meat material to substantially reduce an amount of microbes on an exterior surface of a whole meat material; a grinding station including a grinder downstream of the conveyor and operatively connected to the microbial treatment station, the grinder having a orifice plate through which the whole meat material passes and is ground into ground meat product and a cavity downstream of the orifice plate which receives the ground meat product and a microbial treatment apparatus in communication with the cavity and configured to treat the ground meat product to deter growth of microbes on the ground meat product.
Roasting rack and carving board system
A roasting rack and carving board system includes a roasting rack having a number of spaced support members that support a food item. The system also includes a carving board that has a body with a cutting surface. The body and cutting surface features a number of grooves that receive the spaced support members of the roasting rack so that at least portions of some of the plurality of spaced support members are recessed into the carving board body with respect to the cutting surface.
