The invention also relates to a method for preparing said milks.

It is generally assumed that fresh milk fat is one of the most important constituents in contributing to the desirable flavor of fresh milk, and little attention has been given to the contribution of SNF to fresh milk's flavor.

The richness and creaminess of fresh milk based on evaporation of raw milk as described in the prevent invention, is the result of the significant increase in SNF obtained by the removal of water.

Hydrogels are blended with water to produce a hydrogel solution. Viscosity of the hydrogel solution is controlled by adjusting the ratio of hydrogel to water and/or by adjusting the blending conditions. The hydrogel solutions may be used to modify the rheology of agricultural compositions. The hydrogel may include lactose, which may be provided by a milk permeate waste stream from the dairy or food processing industry.

METHODS OF PURIFYING EXOSOMES

Exosome purification methods involve use of a whey composition as an exosome source. Exosomes are isolated by subjecting the whey composition to a first ultrafiltration, which yields a first permeate and a first retentate. The first retentate may then be subjected to a second ultrafiltration, yielding a second permeate and a second retentate. During the second ultrafiltration, the first retentate may be treated with carbon dioxide. The second retentate may then be subjected to a third ultrafiltration, yielding a third permeate and a third retentate. The third permeate may then be optionally dried to yield an exosome powder.

A method for preparing a modified whey protein concentrate (WPC) or whey protein isolate (WPI) is described. It involves (a) providing an aqueous WPC or WPI solution having a protein concentration of 15-50% (w/v), at a pH of 4.7-8.5; (b) heat treating the solution to more than 50 DEG C for a time that allows protein denaturation to occur; the heat treating comprising heating the solution while under conditions of turbulent flow. At the end of the heat treatment, the heat treated material may be promptly transferred to a drier or to be mixed with other ingredients. The heat-treated WPC or WPI is not subjected to a mechanical shear process prior to the transfer other than where liquid is converted into droplets to facilitate drying. The modified WPC is useful in the manufacture of food and drinks where a high protein content is desired without undesirable changes in texture.

A process for making a shelf-stable food, not requiring preservatives or refrigeration and in a form that is convenient for use as a snack food. A block of tofu or wheat gluten is first frozen so as to cause the formation of ice crystals that form cavities within the block. The frozen block is then thawed, cut into smaller pieces and drained of excess water. The thawed pieces are dried in a microwave-vacuum dehydrator to produce a crunchy food product.

The present invention relates to a method for preparing a spray-dried dairy powder for forming a milk beverage when dissolved in a beverage medium, the method comprising: forming a dairy composition by: (i) adding a sugar composition to a dairy liquid; or (ii) blending a sugar solution with a dairy liquid, and spray-drying the dairy composition to form a spray-dried dairy powder comprising amorphous sugar, wherein the sugar composition or the sugar solution provides from 10 to 40 wt. % sugar by weight of the spray-dried dairy powder and wherein the sugar is selected from sucrose, lactose and a mixture thereof.
