Dough compositions that can be baked to provide baked articles (e.g., cinnamon rolls) having an extended shelf life of about 7 days or greater (e.g., about 14 days, about 21 days, or about 28 days or greater). The dough composition may be a developed dough compositions or an under-developed dough compositions. The dough compositions may include one or more shelf life enhancing agents.

In certain embodiments, the whippable food product is substantially free of emulsifier. Such a whippable food product can be capable of being aerated, for example, to a stable foam having an overrun in the range of 100%-700%.

Systems and methods for ordering and preparation of customized comestibles

In an illustrative embodiment, systems for designing and producing customized food products include receiving a request to design a customized food product containing a printed edible medium. The systems may calculate, based on product inventory at a preferred bakery, a preparation lead time for the food product where the product inventory includes availability of printed edible media substrates. The systems may present customization user interface screens that provide customization options for the food product. The systems may convert customization option selections made at the customization user interface screens into decorating instructions for the food product and transmit the decorating instructions to the bakery. The systems may determine a position in a preparation queue for the food product based in part on attributes of pending food product orders in a preparation queue at the bakery.

In some embodiments, the process comprises: (a) heating the fat matrix to provide a melted or heat-plasticized fat matrix; (b) mixing the ingredient into the melted or heat-plasticized fat matrix, optionally wherein the ingredient comprises particles; and (c) cooling the mixture formed in step (b) to form the composition comprising a dispersion of an ingredient in a fat matrix, optionally wherein the ingredient is selected from the group comprising a macronutrient, a micronutrient, a dietary bioactive, a pharmaceutical ingredient, and combinations thereof, further optionally, wherein the dispersion is a uniform dispersion.
