The present disclosure relates to plant-based egg liquid formulations and processes thereof, in particular plant protein-based egg liquid formulations and processes thereof. The plant-based egg liquid formulation comprises at least two plant proteins in the range of 4 to 30% selected from mung bean protein, soy protein, chickpea protein, pea proteins (yellow pea, green peas), fawa bean, bengal gram, black gram, amaranth protein, mushroom or combinations thereof, edible oil in the range of 3 to 25% selected from peanut oil, palm oil, soya oil, rice bran oil, sunflower oil, mustard oil, canola oil or combinations thereof; emulsifiers in the range of 0.1% to 3% selected from xanthan gum. guar gum, gellan gum, acacia gum, methyl cellulose, tapioca syrup, lecithin, soy lecithin, Locust Bean Gum, tamarind gum, modified starch, or combinations thereof; salts in the range of 0.1% to 3% selected from a mixture of pink salt, black salt, table salt, tricalcium phosphate, tetra sodium pyrophosphate, potassium citrate; taste enhancers in the range of 0.05% to 2% selected from vegan nutritional yeast extract, vegan egg flavor, sugar, dried powder or pastes of onion, garlic, or combinations thereof. The egg flavor compositions can be used in a variety of food products to provide egg flavor and enhanced functionality.

In one embodiment the method of making a food product comprises feeding a liquid composition into a cavity, the liquid composition comprising at least 80% liquid egg comprising albumen and yolk; mixing the liquid composition in the cavity; raising the temperature of the mixed liquid composition to above 175 F.; and after raising the temperature, extruding the mixed liquid composition through a die cavity having a temperature greater than 175 F. to solidify and shape the mixed liquid composition into a solid composition; and cutting the solid composition to a desired length.

An egg food product is provided that when mixed with baby food and given regularly to a baby will reduce the likelihood of the baby developing a food allergy to eggs. The egg food product is produced by taking whole eggs or egg whites and mixing or whipping them, either by themselves or with other ingredients such as rice, tapioca, wheat, corn, nut flours, soy flour, or bean flour. An acid or acid salt containing food product such as citric acid, lemon juice, and cream of tartar may be added while mixing or whipping the eggs in order to help firm the eggs or egg whites and allow them to retain more air. The resulting batter is then baked in order to produce a cake-like product. The resulting cake is then dried in order to remove substantially all moisture. The dried cake is then ground or milled into a powder.
