A method for producing a purée from a food product, comprising the following steps: refining the food product up to obtaining a purée; de-activating the enzymes by heating the purée, in order to prevent oxidation of the purée. The step of de-activating the enzymes comprises the step of passing an electric current through the purée between electrodes of a first ohmic heater (31).
FILLED BAKERY PRODUCT
The present invention relates to a pourable fruit filling having a water activity in the range of 0.78 to 0.90, said fruit filling containing 10-40 wt. % of fruit pieces dispersed in 60-90 wt. % of a continuous phase, said continuous aqueous containing 18-48 wt. % water, 7-21 wt. % of one or more polyols selected from glycerine, propylene glycol, sorbitol, mannitol, xylitol and erythritol, and 30-60 wt. % of one or more sugars. The pourable fruit filling of the present invention may suitably be applied in the preparation of filled bakery products that exhibit surprising stability at room temperature. The invention further provides a filled bakery product comprising 10-60 wt. % of a pourable fruit filling according to the present invention and 40-90 wt. % of a casing of fully or partially cooked dough that encloses the pourable fruit filling.

A process of preparing sugarless peptide cultivated enzyme is provided in which surfaces of vegetable and fruit are cleaned and sterilized by hyperbaric oxygen, the vegetable and fruit with flesh and skin are smashed to a vegetable and fruit paste having dregs, the dregs is separated from the vegetable and fruit paste which is then soaked to form a raw vegetable and fruit solution which is poured into a fermentation tank including a catalase peptide ceramic layer having graphene, the raw vegetable and fruit solution cyclically flows through the catalase peptide ceramic layer for 1.5 months to 3 months of fermentation and cultivation period, and the cultivated vegetable and fruit solution is filtered to obtain a liquid sugarless vegetable and fruit enzyme product.
Shelf Stable Aggregate Food Product
Shelf stable aggregate foods are described that include a chewy binder that includes essentially no non-intact sugar sources. A binder in a shelf stable aggregate food remains chewy over shelf life and contains a sprouted whole grain ingredient, gum Arabic, an oil, and glycerin. Also described are methods of making a shelf stable aggregate food.
Grilling rack
A food grilling rack provides a frame defined by a plurality of connected side walls forming a closed geometric shape. The frame includes a lower corrugated sheet that provides multiple troughs, each trough having a lowest portion. The lower sheet is attached to at least some of the side walls. An upper sheet of material is supported (e.g., removably) above the sheet of corrugated material. There are a plurality of openings in the upper sheet of material, each opening being vertically aligned with a lowest portion of a trough. In one embodiment, the frame includes a pair of flanged members attached to a lower corrugated sheet that provides multiple troughs, each trough having a lowest portion. A sheet with openings slides into the frame aligning the openings with the lowest part of the trough. A food stuffing apparatus provides a receptacle having an interior, an upper end portion with a larger opening and a lower end portion with a smaller opening, and a tapering portion in between the upper and lower end portions. A plunger is provided having a head, a lower end portion with a shaft having a lower pushing surface and a joint that joins the head to the shaft. The pushing surface has a larger diameter portion, the shaft tapering above the pushing surface to a smaller diameter portion above the pushing surface in the upper one half of the plunger.
PROCESS FOR SWEET POTATO FERMENTATION AND DAIRY ALTERNATIVE PRODUCTS OBTAINED
Provided herein are processes to ferment sweet potatoes and the dairy alternative food products produced thereof. Sweet potatoes and water are blended to obtain a smooth sweet potato mixture and then optionally strained. The mixture is optionally pasteurized and cooled to an incubation temperature to enable the addition of live cultures of fermentation microbes which create the characteristic aroma and sour tang of a fermented dairy product. The product is then subsequently refrigerated for storage. In other embodiments the process relies on wild type fermentation without the addition of commercially prepared or other prepared live microbes. Additives and foods can be incorporated during various stages of the processes.
Nucleotide sequences and corresponding polypeptides conferring modulated growth rate and biomass in plants grown in saline conditions
The present invention relates to isolated nucleic acid molecules and their corresponding encoded polypeptides able confer the trait of improved plant size, vegetative growth, growth rate, seedling vigor and/or biomass in plants challenged with saline conditions. The present invention further relates to the use of these nucleic acid molecules and polypeptides in making transgenic plants, plant cells, plant materials or seeds of a plant having plant size, vegetative growth, growth rate, seedling vigor and/or biomass that are improved in saline conditions with respect to wild-type plants grown under similar conditions.

The invention relates to a particulate meat seasoning composition comprising: a) 10-70 wt. % of farinaceous component comprising: 5-30% by weight of the farinaceous component of semolina component having a particle size of more than 100 μm to 1,200 μm, said semolina component being selected from wheat semolina, rice semolina, maize semolina, rye semolina, tapioca semolina and combinations thereof; 70-95% of by weight of the farinaceous component of flour component having a particle size of 10 μm to 100 μm, said flour component being selected from wheat flour, rice flour, maize flour, rye flour, tapioca flour and combinations thereof; b) 30-90 wt. % of one or more seasoning ingredients selected from sodium chloride, potassium chloride, sodium glutamate, spices, herbs, vegetables, fruit, sucrose and yeast extract, inosine 5′-monophosphate, guanosine 5′-monophosphate and protein hydrolysate;
wherein the farinaceous component has a multimodal particle size distribution with at least one maximum below 100 μm and at least one maximum above 100 μm. This particulate meat seasoning composition that can suitably be applied onto meat products, such as steaks and bigger cuts of meat, before these meat products are cooked, e.g. by pan frying and/or roasting in the oven. The seasoning composition not only improves the flavour of the cooked meat product, but also improves the juiciness of the cooked, ready-to-eat meat product.
