Provided is a method for the production of a HA-GOS preparation, comprising contacting a lactose feed with a beta-galactosidase (EC 3.2.1.23) comprising an amino acid sequence according to any of SEQ ID NO: 1, 2, 3 or 4, or an amino acid sequence that is at least 80% identical thereto, wherein the lactose feed is a cheese whey permeate (CWP) or a CWP that is enriched in sialyllactose (SL-CWP).

The present invention relates to a biotechnological process for the production of a fermented pollen comprising the inoculation of pollen with at least one lactic bacterium of the species Lactobacillus kunkeei selected from Lactobacillus kunkeei PF12 (DSM 32843), PF13 (DSM 32845) and/or PL 13 (DSM 32844) and the fermentation of the pollen inoculated with said lactic bacterium. The fermented pollen obtained has nutritional and organoleptic properties similar to bee bread naturally produced inside the honeycomb of the beehive and finds application in the food and nutraceutical field. The invention further encompasses Lactobacillus kunkeei PF12 (DSM 32843), PF13 (DSM 32845) and/or PL 13 (DSM 32844) as such and compositions comprising these strains.

Disclosed herein is an anticaking agent for cheese, comprising one or more dairy ingredients; and one or more non-dairy ingredients. When applied the anticaking agent is applied to a divided cheese, it has low visibility on the divided cheese, prevents caking of the divided cheese, and browns similarly to divided cheese without the anticaking agent when baked in an impinger oven at between 425° F. and 450° F. for 5 minutes. Also disclosed are food products containing an anticaking agent described herein, and methods for treating divided cheese for anticaking using an anticaking agent described herein.
