<i>Trichoderma reesei </i>host cells expressing a glucoamylase from <i>Aspergillus fumigatus </i>and methods of use thereof
Fungal glucoamylases from Aspergillus fumigatusexpressed in Trichoderma reesei host cells (AfGATR) are provided. Trichoderma reesei host cells express AfGATRs at higher, or at least comparable, levels to natively expressed AfGA Aspergillus fumigatus. AfGATRs, including AfGA1TR and AfGA2TR, exhibit high activity at elevated temperatures and at low pH, so AfGATRs can be used efficiently in a process of saccharification in the presence of alpha-amylase, such as Aspergillus kawachii alpha-amylase (AkAA). AfGATRs advantageously catalyze starch saccharification to an oligosaccharide composition significantly enriched in DP1 (i.e., glucose) compared to the products of saccharification catalyzed by Aspergillus niger glucoamylase (AnGA) or native AfGA expressed in Aspergillus fumigatus. AfGATRs such as AfGA1TR, AfGA2TR or a variant thereof can be used at a lower dosage than AnGA and natively expressed AfGAs to produce comparable levels of glucose.

The present disclosure relates to endo-beta-mannanases from Paenibacillus and Bacillus spp., polynucleotides encoding such endo-beta-mannanases, compositions containing such mannanases, and methods of use thereof. Compositions containing such endo-beta-mannanases are suitable for use as detergents and cleaning fabrics and hard surfaces, as well as a variety of other industrial applications.
PRODUCTION OF BREWER'S WORT HAVING INCREASE FERMENTABLE SUGARS FOR FERMENTATION
The present disclosure provides methods, compositions, apparatuses and kits comprising two or more distant related glucoamylases in mashing having a synergistic effect on the released fermentable DPI sugar. Increased levels of DPI being primarily glucose is of high importance for high attenuation brewing applied for brewing low carb or light beers. In some embodiments, the present disclosure provides methods, apparatuses; compositions and kits for the use of two or more glucoamylases to increase the apparent specific activity in the mashing operation.
Clarified fermented beverages, and a method thereof
A system and method in a process for making a fermented beverage (FB), such as a bright beer, and producing a clarified FB, using a caustic dosing system to neutralize naturally-present organic acids typically present in a the fermented beverage (such as a bright beer) to the salt forms of the organic acids, and removing or separated the salts to form the clarified fermented beverage or clarified bright beer.
USE OF STEVIOL GLYCOSIDE IN MALTING
A method of germinating cereal grains includes: steeping cereal grains in water to obtain steeped cereal grains having average moisture content of 36 wt% to 55 wt%; adding a steviol glycoside to the steeped cereal grains to form a mixture; germinating the mixture to form a germinated mixture; and drying the germinated mixture sufficiently to result in a malt product.
Water ionization system and method
A method for producing an ionized water product for coffee comprises the steps of introducing source water to an ionization system, passing the source water through one or more reaction vessels, wherein one or more ionic species are introduced into the source water, and combining products of one or more reaction vessels to produce the ionized water product having between about 10 ppm to about 40 ppm magnesium ions, about 10 ppm to about 40 ppm calcium ions, and about 40 ppm to about 90 ppm total of bicarbonate and carbonate ions.
Water purification system
A water purification system is configured to create a treated water for a home brewing operation. The water purification system includes a sediment filter, connected to an untreated water source. Untreated water flows from the untreated water source through the sediment filter creating a sediment filtered water. A carbon filter is connected to the sediment filter. The sediment filtered water flows through the carbon filter creating a carbon filtered water. A reverse osmosis system is connected to the carbon filter. The carbon filtered water flows through the reverse osmosis system and is segregated into a treated water and a rejected water. The treated water is distributed to the come brewing operation. A deionizing filter is connected to the reverse osmosis system with an automatic shutoff valve. The deionizing filter receives a second flow of treated water and creates a deionized water.

Disclosed is a system and method for extraction of soluble flavoring components from a solid flavor carrier material into a brewing liquid. The system comprises a process vessel and a filtration device. The process vessel comprises an inlet for solid flavor carrier material, a circulation inlet for material comprising brewing liquid and a circulation outlet for material comprising brewing liquid. The filtration device is arranged for separation of solid components from material comprising brewing liquid and is a cross-flow filtration device comprising at least one cross-flow filter, a circulation inlet for material comprising brewing liquid, a circulation outlet for unfiltered material comprising brewing liquid and a closable outlet for filtered material comprising brewing liquid. The process vessel and the filtration device are comprised in a recirculation loop. Furthermore, the system comprises a recirculation pump and a closable feed inlet for introduction of material comprising brewing liquid into the recirculation loop.

A method of preparing a wort with an increased level of free amino nitrogen (FAN) comprising: a) preparing a mash from a grist comprising malt and/or adjunct; and b) adding a protease having at least 80% sequence identity to the polypeptide of SEQ ID NO: 1.
