Alcoholic compositions having a lowered risk of acetaldehydemia
The present invention provides beverages and pharmaceutical compositions containing a deuterated alcohol according to Formula 1, and provides methods for their manufacture and use. ##STR00001##
The compositions of the invention are expected to ameliorate some of the negative side effects associated with the consumption of alcohol, such as hangover and facial flushing.
LACTOBACILLUS APINORUM AND LACTOBACILLUS MELLIFER FROM HONEYBEES IN MEDICAL, FOOD AND FEED APPLICATIONS
The invention relates to new isolated Lactobacillus strains chosen from Lactobacillus mellifer Bin4N.sup.T (LMG P-28344) and Lactobacillus apinorum Fhon13N.sup.T (LMG P-28345), which have been isolated from honeybees or their processed food. The bacterial strains have unique properties such as production of benzene, free fatty acids and 2-heptanone, rendering them useful in many areas such as in food and beverage products, feed products and medical products.
METHOD AND SYSTEM FOR PRODUCING ULTRA-HIGH GRAVITY ALCOHOLIC BEVERAGES USING AN ENHANCED DRAW SOLUTION
Methods and systems are described that produce an ultra-high gravity alcoholic beverage from a high gravity alcoholic beverage stream using an efficient, low waste, combination reverse osmosis and forward osmosis system and an enhanced draw solution. Utilizing a reverse osmosis system prior to using a forward osmosis system in removing water content from a high gravity alcoholic beverage stream significantly reduces a draw solution load when compared to a process that utilizes a forward osmosis system alone or prior to using any other dewatering system. In addition, the enhanced draw solution, comprising at least one of acetaldehyde, amyl acetate, ethyl acetate, ethyl hexanoate, ethyl octanoate, iso-amyl acetate, iso-amyl alcohol, iso-butanol, n-propanol, pentyl acetate, and phenyl ethyl alcohol, offers an efficient and low-cost alternative to ethanol-based draw solutions.

HYDROLYSIS OF BREWER'S SPENT GRAIN
A product hydrolysate from brewers' spent grain is disclosed, and the process for the preparation thereof, as well as uses thereof in food for humans and feed for animals. This hydrolysate contains a high percentage of pentosans at a low molecular weight which therefore offers a high bioavailability of soluble fibres. This allows the drawbacks associated with a high consumption of wholegrain products to be overcome, while also allowing consumers to benefit from the nutritional components contained therein.

EXPRESSION OF HETEROLOGOUS ENZYMES IN YEAST FOR FLAVOURED ALCOHOLIC BEVERAGE PRODUCTION
The present disclosure concerns recombinant yeast host cells expressing one or more heterologous polypeptide for making a flavour compound and a native ethanol production pathway. The recombinant yeast host cells can be used in a subsequent production process to make flavoured alcoholic beverage products, such as beers.
METHODS FOR STERILIZING FERMENTED BEVERAGES
Methods and systems in a process for disinfecting or sterilizing a fermented beverage and/or a composition utilized in a fermentation process to produce a fermented beverage, using ultraviolet light. Such methods and systems can be coupled with processes for neutralizing unwanted acidic congeners and separating the resulting salts of the acidic congeners to produce a refined fermented beverage, including but not limited to a neutral malt base, gluten-free base, gluten-reduced base, grain-neutral spirit, wine base, and a sugar-brew base. Drinkable fermented beverages, including but not limited to flavored malt beverages and hard seltzer beverages, can also be disinfected or sterilized with ultraviolet light using any of the systems or methods described herein.
Alcoholic beverage composition containing Bacillus coagulans
A probiotic-alcoholic beverage composition comprising Bacillus coagulans is disclosed herein wherein the said spore or vegetative cell of Bacillus coagulans exhibited high recovery, tolerability, compatibility and viability of spores and vegetative cells after brewing. Methods for brewing an alcoholic beverage composition comprising Bacillus coagulans wherein said spore or bacterium is added during pre-fermentation, during fermentation and post fermentation stages are also disclosed.
Barley with low levels of hordeins
The present invention relates to methods of producing a food or malt-base beverage suitable for consumption by a subject with Coeliac's disease. In particular, the present invention relates to methods of producing a food or malt-based beverage with low levels of hordeins. Also provided are barley plants which produce grain that can be used in the methods of the invention.
