Rotisserie Oven with Shooter Tube Cleaning System
A grease removal system for an oven that collects excess grease during a cook cycle into a reservoir, which also serves as a container for cleaning solution during a clean cycle. A high-pressured shooter tube allows the cleaning solution to be shot from the reservoir to a ceiling of the oven cavity without the need for extra tubing.

Transportable technical container for chemical liquids provided with a container body at least provided with a base wall, with an opposite upper wall and with perimeter walls, said container body realizing a containment chamber, wherein the technical container is provided with a grip handle and with a threaded cylindrical mouth closable by a threaded closing cap, wherein the height of each perimeter wall is in any case lower than the width and length dimensions both of the base wall and of the upper wall in such a way that the technical container assumes a substantially flattened shape so as to be able to be positioned in the space present below a professional oven of the known type.
STEAM OVEN CLEANING METHOD
A method for cleaning a cavity of an oven having a steam generation device, comprising the following steps: (i) a step of mild detergent cleaning, comprising (i.1) a step of applying mild detergent to the oven cavity at a predetermined cavity starting temperature (T.sub.0), and subsequently (i.2) a step of incubating the oven cavity for a predetermined incubation period of time (t.sub.inc1) at a temperature T.sub.act, (i.3) a step of applying steam generated by the steam generation device to the oven cavity for a steam period of time (t.sub.steam1) until the oven cavity reaches a temperature T.sub.1, and subsequently incubating the oven cavity for an incubation period of time (t.sub.inc2) until the oven cavity reaches a temperature T.sub.2, and (i.4) a step of removing water and dirt from the oven cavity; and (ii) a step of steam cleaning, comprising (ii.1) a step of applying steam generated by the steam generation device to the oven cavity for a steam period of time (t.sub.steam2) until the oven cavity reaches a temperature T.sub.3, and subsequently incubating the oven cavity for an incubation period of time (t.sub.inc3) until the oven cavity reaches a temperature T.sub.4, and (ii.2) a step of removing water and dirt from the oven cavity.
Self-cleaning food cooking oven
An oven includes a cooking chamber for housing food to be cooked, a control unit, and a reservoir for containing washing detergent at room temperature. The washing detergent has an activation temperature. The oven also includes a liquid supply arrangement selectively activated by the control unit for supplying the washing detergent into the cooking chamber, and one liquid heating element for heating the washing detergent and to be selectively activated by the control unit. During a washing cycle, the control unit performs the following ordered operations: a) activate the one liquid heating element for a first time period sufficient to increase its temperature to the activation temperature; b) deactivate the liquid heating element; c) when the temperature of the liquid heating element is about the activation temperature, activate the liquid supply arrangement so that the washing detergent is heated by the liquid heating element while supplied into the cooking chamber.
Steam treatment appliance
A steam treatment appliance includes a steam generation facility, a water tank for providing liquid for the steam generation facility, a first pump for pumping liquid out of the water tank and to the steam generation facility, an accommodating container, a second pump for pumping liquid out of the steam generation facility and to the accommodating container, and a third pump for pumping liquid out of the accommodating container and into the water tank.
Cleaning chemical assembly, cleaning chemical modular system, and cooking appliance
A cleaning chemical assembly for a cooking appliance has a collection container, a pump, at least two ports for storage containers that contain different cleaning chemicals, and at least one device for identifying the cleaning chemical in the respective storage container. The device for identifying the cleaning chemical is a switching element that is designed to cooperate with a mechanical coding on the respective storage container. The switching element includes a plurality of microswitches at the ports.
OVEN WITH CLEANING SYSTEM AND GREASE AND WATER FLOW SEPARATION
Ovens having spray systems for spraying cleaning fluid in a cooking chamber are disclosed that include a chamber drain flow path that leads to a grease drain path and a water drain path. A baffle wall in the chamber drain flow path controls the flow of fluid between the grease drain path and the water drain path. The chamber drain flow path may also have a recirculation path to return water to the spray system. Ovens having spray systems for cleaning are disclosed that include a door having a latch mechanism that automatically latches upon closure of the door and a gasket disposed between the door and an oven housing that directs water impinging upon the door back into the cooking chamber and the chamber drain flow path. The door may have an inner glass pane and an outer glass pane pivotably mounted to the inner glass pane.

Multizone Oven with Improved Cleaning Distribution
A multi cavity oven provides improved cavity and jet plate cleaning by directing pressurized cleaning spray into the jet plates while installed within the oven through cleaning spray inlet ports in the walls of the removable jet plates. By directing cleaning spray directly into the interior of the jet plates, cooking juices that fall through the slots and openings and into the air passageway of the jet plates can be pressure cleaned and drained from the interior of the jet plates without removing the jet plates from the oven cavity.
Combination heat and steam oven
A combination heat and steam oven according to the present invention includes a housing having an internal heating compartment, at least one dry heating element disposed within the heating compartment, a steam generating unit configured to produce steam for injection into the heating compartment, and a user interface. The user interface is configured for selectively controlling operation of the at least one dry heating element and the steam generating unit, so that the steam generating unit and the at least one dry heating element may be operated alone or simultaneously with the other of the steam generating unit and the at least one dry heating element.
