Electric oven

The present invention relates to an electric oven capable of reducing contaminants, the electric oven comprising: an oven body having a cavity capable of accommodating food therein; and a convection assembly which is installed to protrude from one surface of the cavity and which can suck and remove contaminants generated when cooking the food and can heat the inside of the cavity. The convection assembly comprises: a cover case, protruding from one surface of the cavity, including a front surface which is spaced apart from the one surface of the cavity and has an inlet port, and a side surface which extends from the front surface to the one surface of the cavity and has an outlet port; a convection fan which is installed inside the cover case and allows air containing the contaminants to be sucked into the cover case through the inlet port and discharged through the outlet port; and a convection heater for heating the air sucked into the cover case by the convection fan to remove the contaminants, wherein the air discharged from the cover case moves in an upward inclined direction with respect to the one surface of the cavity.

The conveyor device is designed to transport dough pieces through the proofing chamber. The conveyor device defines a number of transport planes arranged substantially horizontally or vertically, in particular horizontally or vertically. At least one profiled surface of the outer frame profiled sections which run at an angle to the gravitational direction and are arranged below the transport plane or the point of the transport plane arranged at the top in the gravitational direction is inclined in the direction of the interior.

Grilling machine

A grilling machine is described, which comprises a base body, a plate, arranged on the base body and defining a cooking surface whereon foods to be cooked are laid, and heating means operationally associated with the plate for heating the cooking surface. There is also a circuit, associated with the plate, for treating the fumes produced during the food cooking process. The fumes treatment circuit comprises: a hood arranged above the plate, which comprises at least one suction mouth, a filtering unit fluidically connected to the hood, and at least one recirculation outlet fluidically connected downstream of the filtering unit and located near the plate. In this manner, the cooking fumes sucked in through the suction mouth of the hood are treated by the filtering unit in order to obtain a purified flow with a given percentage of humidity. The purified flow is then recirculated towards the cooking surface through the recirculation outlet in order to exert a humidifying action on the foods.

Responsive to the heating plate being heated to above a predefined start temperature for a predefined soak period of time, one or more nozzles are directed to introduce water onto the heating plate to generate superheated steam until the heating plate falls below a predefined reboot temperature. The power and watering operations are repeated according to a predefined number of clean cycles specified by the self-clean operation.
