OVEN AND COOKING METHOD FOR THE FOOD SERVICE INDUSTRY WITH REMOTE CONTROL AND PROGRAMMING UNIT
An oven and cooking method is provided. The oven comprises a washing system with controlled feeding, distribution and recirculation means of a detergent liquid in the cooking chamber and with means for the removal of the detergent from the cooking chamber. The oven also has a device for flavouring food and a logic unit that communicates with the user via the Internet for remote access, instruction, monitoring, and control.
System for cleaning circulating oven air with reduced thermal disruption
An air cleaning system for an oven that includes a cooking chamber configured to receive a food product includes a catalytic converter, an input array and a preheater. The catalytic converter may be configured to clean air expelled from the cooking chamber. The input array may include perforations through which cleaned air that has been processed by the catalytic converter is provided into the cooking chamber. The preheater may be disposed proximate to the cooking chamber to use heat generated by the cooking chamber to preheat the cleaned air prior to entry of the cleaned air into the cooking chamber through the input array.

Cooking appliance with a pan and a method for cleaning the pan
A method for cleaning the cooking space of a cooking appliance with a pan including adding a cleaning agent to the cooking space and if necessary, after this agent has been allowed to work for a certain period of time, a liquid jet is introduced under high pressure from the a spray head of a cleaning device through the at least one spray nozzle, which rotates around an axis perpendicular to the rotational axis of the spray head rotating around this axis. The liquid jet consists exclusively of water and which swirls and splashes the cleaning agent, and if necessary, after this splashed agent has been allowed to work for a further certain period of time, removes the residues mechanically from the bottom, the walls, and the inside surface of the lid, and wherein said residues are then carried away together with the washing solution out of the cooking space via the drain.
Cooking Appliance for Commercial Kitchens Comprising a Fat Extraction Device, Fat Extraction Device and Method for Operating Such a Cooking Appliance with Fat Extraction
A cooking appliance for commercial kitchens has a fat collection device with at least one fat collection container, at least one fat extraction line, at least one suction pump and at least one fat discharge line. The fat extraction line extends from the fat collection container to the suction pump. The suction pump conveys a fat-water mixture via the fat extraction line into the fat discharge line. A cleaning device is provided which conveys water at least via the fat extraction line and the fat collection container into a cooking chamber outlet of the cooking appliance.
Slim Profile Spray Nozzle for Cooking Appliance
A cooking oven is provided having a cleaning system with a spray nozzle that leverages the kinetic energy of the cleaning fluid entering the nozzle to aid in the dispersion of this cleaning fluid. This is done by conducting that fluid in a circular path to preserve its kinetic energy as it circulates around the nozzle and is discharged tangentially. Desirably, the circulation of the cleaning fluid is in a horizontal axis so as to minimize the nozzle height.
APPLIANCE AND METHODS FOR OPERATING SAME IN A SAFETY-CRITICAL OPERATION USING A TOUCHSCREEN
An appliance and methods for operating the appliance in a safety-critical operation are provided. The appliance and methods for operating the appliance include features that provide safe and intuitive ways to initiate and cancel safety-critical operations performed by the appliance.
