Antimicrobial preparation from fermentation yeast precipitate
Provided are methods of making and using an antimicrobial composition, optionally including adding one or more enzymes to a suspension of lees, wherein the lees was formed by fermenting fruit with yeast and the one or more optional enzymes comprise a protease, a carbohydrase, or a combination of a protease and a carbohydrase; and forming a dried lees by drying the lees. In some examples the fruit includes chardonnay grapes, pinot noir grapes, cabernet franc grapes, or a combination of any two or more of chardonnay grapes, pinot noir grapes, and cabernet franc grapes; the yeast includes one or more Saccharomyces cerevisiae strains of yeast; and drying the lees by heating it. In some examples, trub made from fermenting a grain such as barley is used instead of lees. An antimicrobial composition made as provided may be administered to an animal to inhibit bacterial growth.

A method for preparing mulberry leaf products from mulberry leaf concentrate is provided. Cellulase and pectinase prepared by the stock culture of agaric are safer and more reliable; the content and yield of protein and other functional ingredients in mulberry leaves are improved; the mulberry leaf product can be directly applied to processing and production of food, health care products and cosmetics which improves comprehensive utilization rate of mulberry leaf raw materials.

Methods for decreasing harmful effects of blue light on skin are disclosed that include topically administering to a subject in need thereof a composition of an effective quantity of a purified, enzymatic hydrolysate of Theobroma cacao L. beans comprising peptides and saccharides having a molecular weight between 200 Da and 10 kDa in a physiologically acceptable medium. The hydrolysate of Theobroma cacao L. beans is present in the composition at a concentration from 0.001 to 20% with respect to the total weight of the composition. The composition can be a cosmetic composition.

It is an object of the present invention to provide a cellulose-containing composition having excellent coating suitability, a production method thereof, and a film. According to the present invention, provided is a cellulose-containing composition comprising cellulose fibers having a fiber width of 1000 nm or less and protein, wherein the protein includes an enzyme, the content of the protein is 1×10.sup.−3 parts by mass or less with respect to 1 part by mass of the cellulose fibers, and when the cellulose-containing composition having a solid concentration of 0.4% by mass is obtained, the viscosity of the cellulose-containing composition measured under conditions of 25° C. and a rotation number of 3 rpm is 10 mPa.Math.s or more and 11000 mPa.Math.s or less.

Membrane bioreactor for simultaneous enzymatic cellulose hydrolysis and product separation
The membrane bioreactor for simultaneous enzymatic cellulose hydrolysis and product separation is a vessel having a lower hydrolysis reaction chamber and an upper distilled water chamber separated by a semipermeable membrane attached to the top of the lower reaction chamber. The membrane is supported on a stainless steel mesh and sealed to the mesh by epoxy glue to prevent leakage. A peristaltic pump is connected to the reaction chamber and maintains a flow of distilled water through the membrane and the upper chamber, the effluent being collected in a beaker or other product collection vessel. The reaction chamber is agitated at a moderate rate by a magnetic stirrer, and the upper chamber is agitated more rigorously by a mechanical stirrer. A thermocouple and temperature controller and a buffer solution, respectively, maintain temperature and pH in the reaction chamber optimal for enzymatic hydrolysis of cellulose.
USE OF GH12 CELLULASES IN PREPARING BAKERY PRODUCTS COMPRISING RYE-FLOUR
The invention relates to the use of a composition comprising an effective amount of at least one polypeptide having GH12 cellulase activity optionally together with conventionally used baking additives for improving at least one property of a dough comprising rye flour and/or of a bakery product prepared from said dough as well as to a method of preparing a bakery product based on rye having at least one improved property, said method comprising (i) providing a dough that has been added an effective amount of at least one polypeptide having GH12 cellulase activity or a composition comprising at least one polypeptide having GH12 cellulase activity optionally together with conventionally used baking additives, and rye flour, (ii) baking the dough for a time and temperature sufficient to yield the bakery product as well as to a baking enzyme composition for preparing rye-based bakery products comprising a polypeptide having a GH12 cellulase activity optionally together with one or more dough(s) or bakery product additives.

The present invention provides an endoglucanase having excellent heat resistance. Specifically, the present invention provides an endoglucanase satisfying characteristics (A) and (B) below: (A) having an amino acid sequence that is at least 80% identical to the amino acid sequence of SEQ ID NO: 1; and (B) having at least one amino acid substitution selected from the group consisting of K214E, D254E, and S309P.
