Embodiments of the meat installation comprise various features, including a detachable horizontal cylindrical carrier comprising a series of meat fixators, a motor, heaters, at least two position adapters for maintaining each individual heater at a predetermined distance from the cylindrical carrier, at least one temperature sensor, a conveyer belt located underneath the cylindrical carrier for receiving and transporting heated meat, a cutter for removing a slice of a predetermined thickness of meat from the detachable cylindrical carrier, and at least one controller for driving the motor, for maintaining and/or adapting a temperature of each individual heater, for driving the at least two position adapters, for receiving the sensor output, for providing feedback to at least one heater, and for controlling thickness of slices of meat.

The baked products may be sprayed with a riboflavin solution and then irradiated with a UV light source to initiate monomer reactions of acrylamide and reduce the concentration of the acrylamide in the baked product. In addition, riboflavin may be dissolved in heat-processed products, followed by irradiation of the riboflavin-containing heat-processed products with a UV light source to initiate monomer reactions of acrylamide and reduce the concentration of the acrylamide in the baked product.

The radiant arrays include a first group of heating elements above a lower run of the upper belt between said upper rollers and a second opposing group of heating elements below an upper run of the bottom belt between the lower rollers. Each heating element may be separately controlled insofar as its ON/OFF state or in accordance with temperature, to provide more localized baking capabilities.

A matchbox oven is disclosed. The matchbox oven includes a housing, a slider, a mover and a heat source. The housing includes a cavity having a first and second openings. The mover moves the slider in and out of the cavity through the first and second openings. The heat source provides heat to the cavity for heating up any food item placed on a portion of the slider located within the cavity. The slider, which is configured to receive food items, includes multiple stoppers to serve as oven covers for preventing heat within the cavity from escaping through the first and second openings. When necessary, a portion of the slider can also be utilized as a heat sink for lowering the temperature of the cavity during oven operation.

A forced hot air roller conveyor drying assembly is provided. It consists primarily of two parts; a roller conveyor for rolling cylindrical elongated food members while transporting them horizontally from one end of the conveyor to the other, and a hot air drying assembly for blowing hot air around the product as it is being rolled. The combined rolling of the product and the drying of the product helps ensure that the physical roundness of the food product remains nice and uniform while it is being uniformly dried. The forced hot air assembly may include a fan and heating elements, the fan directing warm air to the product rolling horizontally through the assembly and the roller conveyor may be comprised of a multiplicity of paired roller members driven by chain links, which chains are in turn driven by an axle engaging a drive sprocket.
