Bun separation

A bun separator separates pre-sliced buns into portions. A bun feeder receives a pre-sliced bun having a plurality of portions and moves the pre-sliced bun along a first feed path. An obstruction is arranged relative to the first feed path and engages at least one portion of the plurality of portions of the pre-sliced bun. An actuator operates to selectively engage at least one portion of the plurality of portions of the pre-sliced bun against the obstruction to separate the least one portion of the pre-sliced bun and transfer the at least one portion to a second feed path.

Impingement oven

An impingement oven (40) includes an upper housing structure (46) forming the exterior of the upper half of the impingement oven and a lower housing structure (48) to mate with the upper housing structure. An interior impingement housing (62) is positioned interior to the upper and lower housing structures (46) and (48). A conveyor (60) extends through the interior impingement housing (62). The inside surfaces of the upper and lower housing structures (46) and (48) cooperate with the interior impingement housing (62) to define upright supply chambers (80a) and (80b) on opposite sides of the impingement oven to direct cooking medium downwardly upon the work products being carried by the conveyor and also upwardly through the porous belt of the conveyor, thereby to thermally process the work products being carried on the conveyor.

Baked good handling system

A baked goods handling system includes a holding cabinet operable to create a controlled environment therein. A dispenser receives a baked good from the holding cabinet and directs the baked good away from the holding cabinet. A treatment device receives the baked good from the dispenser to perform a treatment on the baked good.

The disclosure provides an automatic smokeless oven with far infrared heating including a seat body, a rotating device, an air treatment device and a cooling device. The infrared heater is positioned above a first cavity and used for heating the first cavity so as to prevent grease, sauce and the like from contacting a heating source to generate oily smoke. The rotating device is arranged in a second cavity and used for driving the food to be baked to turn over, so as to realize an automatically turning over of the food. The air treatment device is arranged at the bottom of the first cavity and used for filtering the air in the first cavity to further reduce smoke emission. The cooling device is arranged at the bottom of the first cavity and communicated with the third cavity for driving the cooling water to flow through the third cavity.

Systems and methods of food preparation automation

Systems and methods of bun holding and toasting use a bun dispenser and a toaster. The bun dispenser includes a bun holding cabinet in which a plurality of buns are held on shelves and each of the shelves include conveyors. A shuttle of the bun dispenser translates within at least one axis to align the shuttle with a shelf to receive a bun. A dispensing shelf of the bun dispenser receives the bun from the shuttle. A toaster receives the bun from the dispensing shelf and operates to toast the bun and dispense the toasted bun at a predetermined location.

The grill comprising: an oven configured to maintain a holding temperature within the oven; one or more grilling stations located in the oven, each of the one or more grilling stations comprising: an upper platen assembly including an upper grilling plate; a lower platen assembly including a lower grilling plate opposite the upper grilling plate, the upper grilling plate being separated from the lower grilling plate by a distance; one or more actuators operably connected to at least one of the upper platen assembly and the lower platen assembly, wherein the one or more actuators are configured to adjust the distance; and a conveyor belt located between the upper grilling plate and the lower grilling plate, wherein the conveyer belt is configured to move a food product between the upper grilling plate and the lower grilling plate.

The baked products may be sprayed with a riboflavin solution and then irradiated with a UV light source to initiate monomer reactions of acrylamide and reduce the concentration of the acrylamide in the baked product. In addition, riboflavin may be dissolved in heat-processed products, followed by irradiation of the riboflavin-containing heat-processed products with a UV light source to initiate monomer reactions of acrylamide and reduce the concentration of the acrylamide in the baked product.
