The griddle component is configured to be received by the plurality of vertical post structures of the support rack. When in use, grease on the sloped cooking surface is directed to the drain slot which discards the grease into combusting fuel (such as charcoal) beneath the griddle component, thereby mitigating or preventing grease fires.

A removable grease receptacle having a pivotable handle, as well as a squeegee element, may be provided below the grease drip flange. The independent cooking zones may be provided by burner assemblies having front and rear burners that provide different levels of heat using a single dual gas control valve.

Embodiments of a griddle of the type for an outdoor cooking station is provided herein. The griddle includes a flat cooking surface with a splash guard extending along a periphery of the flat cooking surface. The flat cooking surface defines a trough positioned adjacent a rear end of the cooking surface such that the trough includes a sloping surface extending downward toward a rear opening defined in the splash guard along and adjacent the rear end of the flat cooking surface. With this arrangement, as a user cooks food on the griddle, unwanted grease may be pushed to the rear of the griddle and into the trough so that the grease funnels down the sloped surface and through the rear opening and into a grease container centered below the rear opening.

For example, the griddle system may include a set of sensors and a latch mechanism to provide a closed and locked platen configuration which can be controlled according to a cooking routine controlled by a controller. A counterbalance assembly may be provided to minimize the effort required to pivot a base frame and cooking attachment between their open and closed configurations. A pullback linkage may be provided to draw a pivotable cooking attachment up at its distal portion when the base frame is pivoted open, creating extra space for placement of food items at the distal portion of the cooking surface. The cooking attachment may include provisions for self-leveling when closed, in order to apply even pressure to food items having varying thicknesses. Height adjusters may be provided to expand or contract the cooking space.
