Rotary screw blancher
A food processing apparatus includes a pressure vessel defining a compartment having an inlet end for receiving food product and an outlet end for discharging food product, an open-top screen mounted within the compartment and movable relative to the compartment between a first position, for food processing, and a second position, to facilitate cleaning, a rotatable auger mounted such that at least a portion of the auger is within the screen, the auger being operable to advance food product within the compartment from the inlet end of the pressure vessel toward the outlet end, and a transfer mechanism including a conduit in communication with the compartment, a fluid discharge positioned substantially within the conduit, and a pressurized fluid source in communication with the fluid discharge and operable to propel a fluid through the fluid discharge to move food product through the conduit.
Fryer
A continuous fryer that includes a vessel (kettle) (11) through which oil (13) flows in a predetermined direction (12). An upstream end of the kettle (11) is a flow control device (34) that at least aids in maintaining linear flow through the vessel (11) is said predetermined direction (12).
CONVEYOR BELT AND ENDLESS FRYER SYSTEM
A flying system for flying a food product is disclosed having an endless conveyor system for cooking product in a bath of hot cooking oil. An upper conveyor belt of the conveyor system includes a plurality of protrusions on the surface that retains the food items with a lower conveyor belt. The protrusions may be formed by bars or rods that may be integrally formed with a fluid pervious surface forming the belt. Also, a process of cooking food items with an endless conveyor system.
System and method for controlling oil content in fried food products
A fryer system and method for producing fried food pieces are disclosed herein. A fryer, located in a frying region of the fryer system, produces fried food pieces. An adjustable draining device, located in a draining region of the fryer system, is downstream from the frying region and controls a residence time of the fried food pieces in the draining region. A set of takeout conveyors bridges the frying region and the draining region and reduces a bed depth of the fried food pieces as the set of takeout conveyors transfers the fried food pieces from the fryer to the draining device. An enclosure at least partially encloses the frying region and the draining region to maintain a controlled environment within the draining region.
APPARATUS FOR PREPARING AND COOKING COATED FOOD ARTICLES IMPALED UPON A STICK
An apparatus is disclosed for preparing a food article (300) such as a corn dog. The apparatus includes a frame (10) mounting a loading station (50), a dipping station (162), a frying station (190) and an unloading station (220). The loading station (50) inserts one end (306) of a stick (302) into the food article (300) and the other end (304) into an aperture (40) in a stick bar (38). The stick (302) and food article (300) are held in the aperture (40) by a spring loaded plunger (310) extending into the aperture (40). The spring loaded plunger (310) holds the stick (302) and food article (300) on the stick bar (38) while the food article (300) is dipped in batter at the dipping station (162) and fried at the frying station (190). The cooked food article (300) and stick (302) are removed from the stick bar (38) at the unloading station (220) for shipment to the customer.
Industrial food fryer
A cooking tank 112 for a food fryer 100 includes a lower heating zone 154 for receiving a heating element of heat exchanger 120, and an upper product zone 152 in which a product transporting conveying system 122 is positioned. The lower heating zone of the tank 112 is narrower in width than the upper product zone 154 of the tank. Conveyor side bars 140 extend upwardly from shoulders 170 extending laterally from the narrower side walls at the heating zone of the tank to the wider side walls 168 at the product zone of the tank. Conveyor side bars 140 extend upwardly from the shoulders 170, inwardly of the side walls 168, to support the conveying system 122.
COOKING DEVICE FOR A FOOD VENDING MACHINE
A cooking device equipped in a food vending machine for cooking ingredients provided by the food vending machine has a chamber, a heating component, and a moving mechanism. The chamber extends in a straight line. The heating component and the moving mechanism are mounted in the chamber. The moving mechanism is used for moving the ingredients from the entrance to the exit. Thus, the cooking device can heat the raw ingredients until fully cooked, so the food vending machine can provide fresh and cooked-on-the-spot food. Furthermore, space in the chamber is utilized efficiently and the chamber suits for various ingredients and cooking methods. Besides, the moving mechanism is capable of moving multiple containers which contain ingredients, so the cooking device can heat multiple sets of ingredients at the same time.
