An apparatus for frying snack foods, the apparatus including a fryer having a tubular frying section with inlet and outlet ends, the outlet end downstream relative to the inlet end. An oil supply system for supplying oil to the inlet end. A food input at the inlet end adapted to introduce pre-fried snack food pieces into a flow of oil at the inlet end. A food output at, or downstream of, the outlet end adapted to separate fried snack food pieces from the flow of oil. An oil flow accelerator accelerating oil flow from the inlet end to the outlet end thereby conveying the snack food pieces, immersed in the oil, from the inlet end to the outlet end during a frying process. Also disclosed is a method of frying snack foods.

Flow of fluid through the clearance space may be inhibited. One of the inner wall and the flight wall may include a perforated wall portion. Flow of fluid between the first auger section and the second auger section may be provided through the perforated wall portion.

A fryer system and method for producing fried food pieces are disclosed herein. A fryer, located in a frying region of the fryer system, produces fried food pieces. An adjustable draining device, located in a draining region of the fryer system, is downstream from the frying region and controls a residence time of the fried food pieces in the draining region. A set of takeout conveyors bridges the frying region and the draining region and reduces a bed depth of the fried food pieces as the set of takeout conveyors transfers the fried food pieces from the fryer to the draining device. An enclosure at least partially encloses the frying region and the draining region to maintain a controlled environment within the draining region.

Described herein are automated cooking apparatuses for storing and cooking food items as well as methods of operating such apparatuses. In some examples, an automated cooking apparatus comprises a storage unit, a delivery unit, and a cooking unit. The storage unit may be equipped with a refrigeration unit and a container delivery opening. The delivery unit is aligned with this opening and configured to load a set amount of the food items into each food compartment of the cooking unit. The cooking unit moves its food compartments through a cooking tank (e.g., filled with a cooking liquid and heated using a set of heating elements) and into a cooked food receiver. The storage unit or, more specifically, its uncooked food container unit is positioned proximate (e.g., within 200 millimeters) to the cooking tank thereby reducing the time for transporting the food items relative to the cooking time.

As each conveyor belt surface is greater than each conveyor lower surface and with cooperation of the chains, leveled progressing of the conveyor strips is maintained. At arched positions of the first transmission axle and the second transmission axle, the conveyor lower surfaces do not come into contact with one another, and the conveyor belt surfaces arranged are small to obtain an even and flat conveying plane.

The uniformizing unit makes the thickness of the food substantially uniform. The second heating unit blows hot air onto the food from injection ports.

Preferably the cooking channel is elongated, as also preferably is the combustion-fired thermal oil heater carried, which is laid down to extend along a horizontal axis underneath the cooking channel. The combustion-fired thermal oil heater is fed either fuel-oil or a fuel-gas for combusting therein.
