A hot oil fryer for continuous frying duty in continuous food process lines has a frame, a cooking channel carried by the frame, a conveyor through the cooking channel having an upper food product carrying-run and a lower return runs, a bed of elongated heat exchanger tubes inside the cooking channel for circulating a thermal fluid, and a combustion-fired thermal oil heater supported by the frame off the floor for heating the thermal fluid which is circulated through the bed of elongated heat exchanger tubes. Preferably the cooking channel is elongated, as also preferably is the combustion-fired thermal oil heater carried, which is laid down to extend along a horizontal axis underneath the cooking channel. The combustion-fired thermal oil heater is fed either fuel-oil or a fuel-gas for combusting therein.

Frying system and method
A system and method for frying one or more food items. The system comprises a frying tank (2) having an open state in which the one or more food items may be introduced into the tank (2) and a closed state in which the interior chamber is hermetically sealed. A cooking oil delivery system (6) delivers cooking oil to the tank (2) so as to completely fill the tank with cooking oil. The method of the invention comprises Inserting one or more food items into the frying tank (2) and delivering cooking oil to the tank so as to completely fill the tank, and then frying the food items.
Pizza fryer
A fryer for frying pizza includes a flying tank designed to contain cooking oil, immersion means and pushing means. The frying tank includes an input and an outlet. The input houses a first conveyor belt arranged to introduce a product in the tank. The outlet houses the first conveyor belt or a third conveyor belt to extract the product from the tank. The immersion means are arranged to regulate immersion of the product in the cooking oil during at least a portion of a relative path from the input to the outlet of the tank. The pushing means are configured for moving the product from the input to the outlet.

Fryer
A fryer includes a frying tank adapted to contain a cooking liquid; a pump adapted to suck from the frying tank, by suction duct, a portion of the cooking liquid and adapted to discharge into the frying tank, by a discharge duct, the portion of the cooking liquid. The fryer also includes a heater associated with the suction duct and/or the discharge duct and adapted to heat the cooking liquid flowing through the suction duct and/or through the discharge duct, the cooking liquid being heated only by the heater; and at least one mixer associated with the suction duct and/or discharge duct and adapted to mix cooking liquid flowing through the suction duct and/or discharge duct. The mixer is placed immediately upstream or downstream, or in correspondence with the heater to improve the heat exchange of the cooking liquid with the heater.
Method and apparatus for producing instant fried noodles
Frying is performed in two stages so as to dip a retainer in frying oil at a prescribed dipping ratio and then to dip the whole of the retainer in the frying oil, and in addition, flow rates of the frying oil supplied from an upstream side and a downstream side of a frying oil tank and a surface level of the frying oil are controlled. Therefore, a noodle lump can be prevented from peeling off and floating from the bottom of the retainer before fixing the shape of the noodle lump due to a pressure applied by the frying oil so as not to impair the shape of the noodle lump, and as a result, frying efficiency or production efficiency can be improved. Besides, a noodle lump that has a very small number of coarse or dense portions in a distribution of noodle strings can be stably produced.
AUTOMATED PRESSURE FRYER SYSTEM
Automated pressure fryer systems, cooking vessels, heated oil reservoirs, and methods of operating same to conduct pressure frying cooking cycles are disclosed. An example automated pressure fryer system includes a plurality of cooking vessels, each with a locking lid that engages to form a pressure-sealed cooking chamber for cooking oil and food items, and a food carrier coupled to the lid's bottom surface to hold food items, a gantry system movably positioned above the cooking vessels, and a gripper mechanism coupled to the gantry system and configured to engage and manipulate the locking lids.
FLOW PRESSURE FRYER
Embodiments of the present disclosure relate to a system and method for food product frying. An example system includes a frying chamber configured to hold a volume of heated cooking oil, the frying chamber comprising: a first end and second end defining a length of the frying chamber; and an internal conveyor configured to receive and horizontally translate a food product carrier through the heated cooking oil along at least a portion of the length of the frying chamber. The system may further include an inlet airlock at the first end, the inlet airlock configured to receive the food product carrier and translate the food product carrier into the frying chamber. The system may further include an outlet airlock at the second end, the outlet airlock configured to receive the food product carrier from the internal conveyor and translate the food product carrier out of the frying chamber.
