FRY COOKING METHOD, METHOD FOR SUPPRESSING DETERIORATION OF SILICONE OIL-CONTAINING OIL AND FAT, AND FRY COOKING DEVICE
In order to suppress the deterioration of frying oil and fat, there are provided: a fry cooking method that uses a silicone-oil containing oil and fat as the frying oil and fat and forcibly cools the surface of the frying oil and fat; a method for suppressing the deterioration of a silicone oil-containing oil and fat, the method including forcibly cooling the surface of the silicone oil-containing oil and fat during the heating of the silicone oil-containing oil and fat; and a fry cooking device provided with a fryer into which the silicone oil-containing oil and fat is placed as the frying oil and fat, and a forced cooling device (blower) for forcibly cooling the oil surface of the silicone oil-containing oil and fat placed in the fryer.
Bulk cooking oil distribution system
A portable cooking oil distribution device for filling remote fryers with fresh cooking oil. In other embodiments the device can also collect used cooking oil from the fryer. In one embodiment, a portable device includes a fresh tank, a three-way valve connected by piping to the fresh oil tank, a pump connected by piping to the three-way valve, and a nozzle connected by piping to the pump, the nozzle having an outlet tube connected to the piping between the pump and the nozzle. The device may also include a used oil tank, a second three-way valve connected by piping to the used oil tank, a second pump connected by piping to the three-way valve, and piping connecting the second pump to the nozzle, where the nozzle includes a inlet tube connected to the piping between the pump and the nozzle.

The invention relates to a cooking assembly (1) which comprises an electrical cooking appliance (2) and a draining base (3), the electrical cooking appliance (2) comprising a vessel (10) provided with a draining device (60) that has a valve (61), the draining base (3) comprising a draining receptacle (70) and a cover (80) for said receptacle, the receptacle cover (80) forming a passage (80a) for discharge of the cooking bath in the draining receptacle (70), said draining base (3) having a control member (4), and the cooking assembly (1) having a draining configuration in which the draining base (3) supports the electrical cooking appliance (2) and in which the control member (4) moves the valve (610 into the open position. According to the invention, the electrical cooking appliance (2) rests on the receptacle cover (80) when the cooking assembly (1) is in the draining configuration.
BULK COOKING OIL DISTRIBUTION SYSTEM
A portable cooking oil distribution device for filling remote fryers with fresh cooking oil. In other embodiments the device can also collect used cooking oil from the fryer. USER INTERFACE DEVICE FOR COOKING ROBOT, AND COOKING ROBOT CONTROL METHOD USING SAME
A user interface device for a cooking robot according to the present invention comprises: a user interface generating unit for generating a primary UI, a secondary UI, and a cleaning UI; a touch screen for displaying the primary UI, the secondary UI, and the cleaning UI and receiving a user's touch input signal such that at least one of the primary UI, the secondary UI, and the cleaning UI is executed; and a control unit for displaying at least one of a primary frying process status to be displayed on the primary UI, a secondary process status to be displayed on the secondary UI, and a cleaning process status to be displayed on the cleaning UI, on the basis of a user's touch input signal input to the touch screen, and outputting a control signal for an operation command of the corresponding cooking robot.
COOKING OIL EXCHANGE STATIONS, SYSTEMS AND METHODS OF USE
A fill station, fluid exchange system, and method for exchanging of cooking oil from a location having stationary tanks containing bulk fluids are housed employ a fill box with a housing defining an interior; a first port and a second port arranged in the interior of the housing, the first port being fluidly coupled to a first stationary tank, and the second port being fluidly coupled to a second stationary tank, and a heating fluid conduit of a heating system arranged in the interior of the housing. The heating fluid conduit is configured to circulate heating fluid to supply radiant heat to the interior of the fill box to maintain cooking oil in the ports in a liquid phase. Heat may be retained within the housing interior by an insulating barrier arranged therein.
Cooking systems with spreader bar
Systems are disclosed for cleaning a fryer using a washing element coupled to a bottom wall of a cooking chamber. An upper portion of the washing element extends above the bottom wall of the cooking chamber and includes a plurality of spray jet nozzles that are separated at predetermined angles relative to one another around a periphery of the upper portion of the washing element to orient the plurality of spray jet nozzles so as to spray a plurality of pressurized streams of the cooking medium to predetermined areas of the cooking chamber, including at least one corner of the cooking chamber. Also disclosed is a fryer that includes a spreader bar that maintains an electric heating coil in the serpentine pattern. The spreader bar is coupled to the upper surface of the electric heating coil and is disposed at a predetermined distance away from the bottom wall.
DEVICE FOR FILTRATION AND TRANSPORTATION OF USED COOKING OIL
The present disclosure teaches a device for the filtration and transportation of used cooking oil (UCO). The presently disclosed device uses a two-stage filtration system, comprising a basket filter and a reusable SS (stainless steel) filter. After the filtration, the UCO may be discharged back to the fryer or a UCO dumpster via a wand. The selection of a reusable SS filter ensures durability, reusability, and ease of cleaning compared to state-of-the-art cellulose filters. The presently disclosed device uses a rechargeable battery-powered pump to deliver the UCO from the basket filter to the reusable SS filter, which eliminates the use of charging cords, thus allowing maneuverability and eliminating trip hazards in the often-chaotic food preparation environment. The presently disclosed device also includes a platform with wheels for the transportation of the UCO in a food preparation service environment and to the UCO dumpster.
