Bulk product dispenser
An improved dispenser unit for dispensing bulk food items, including a cabinet having at least one hopper having a drum with product compartments, a deflector and flexible gate valve, a dispense assembly, and a control system. The dispense assembly may or may not include one or more belts and/or sensors. The product compartments include flexible and/or elastic membranes, which dynamically change the effective product storage volume within a compartment, and eliminate rigid or semi-rigid pinch points between the drum and drum compartment. A product flow divider may be positioned above the receiving container in the dispense assembly, said divider configured to cause the dispensed product to divide into two or more flow streams into the receiving container. The receiving container may be vibrated or oscillated.

A metering apparatus (1) for metering frozen piece goods, comprising a housing (10) which defines a refrigerated chamber (11), wherein a piece goods container (3), a first conveyor unit (4), and a weighing unit (5) are arranged in the refrigerated chamber (11), wherein piece goods can be transported from the piece goods container (3) via the first conveyor unit (4) to the weighing unit (5), wherein an airlock (13) is arranged below the weighing unit (5), through which piece goods can pass out of the refrigerated chamber (11).
Hot food holding station with multi-functional ramp
A hot food holding station is a device that can keep food warm, especially food that has been deep fried or cooked, thereby providing consumers convenience of serving heated ready-to-eat food. The device further ensures that edibles that are being held are evenly heated across the storage unit. In order to accomplish this, the device uses a heated airflow system that includes multiple air flow passages and a multi-functional grease tray ramp. The heated airflow system includes an air blower unit, an airflow unit, a heated air chamber and a food holding compartment that are fluidly communicated with one another. Further, the device utilizes fresh air from the atmosphere for heating the food, thereby preventing recirculation of air within the system.

A deep fat fryer (1) comprising: a housing (2), a pot (3) adapted to contain a cooking medium, one or more heating elements (4a, 4b), external to said pot (3), for heating a cooking medium contained in said pot (3), a temperature sensor (5) adapted to measure the temperature of a cooking medium contained in said pot (3), a control unit (9), controlling the electrical components of the deep fat fryer (1). The deep fat fryer (1) comprises one or more heat-shield elements (6a, 6b) arranged for slowing down the heat transfer from said one or more heating elements (4a, 4b) to a cooking medium contained in said pot (3).
BULK COOKING OIL DISTRIBUTION SYSTEM
A portable cooking oil distribution device for filling remote fryers with fresh cooking oil. In other embodiments the device can also collect used cooking oil from the fryer. In one embodiment, a portable device includes a fresh oil tank, a three-way valve connected by piping to the fresh oil tank, a pump connected by piping to the three-way valve, and a nozzle connected by piping to the pump, the nozzle having an outlet tube connected to the piping between the pump and the nozzle. The device may also include a used oil tank, a second three-way valve connected by piping to the used oil tank, a second pump connected by piping to the three-way valve, and piping connecting the second pump to the nozzle, where the nozzle includes a inlet tube connected to the piping between the pump and the nozzle.
Fryer
An easy handling and installable fryer for cooking materials in an electric-field carrying space includes an oil pot base including an oil pot having an inner surface at least partially being a metal plate, and a metal mesh basket placeable in and out of the pot. The base includes a pot fastener that allows the basket to be placed in the pot without electricity conduction to the inner surface, and a conductor including a conducting electrode on an upper portion of a pot surface opposing a handling side, and insulated from the inner surface that conducts an alternating current to the basket in the pot. The basket includes a basket fastener that allows, with the pot fastener, the basket to be placed in the pot without electricity conduction to the inner surface, and an electricity receiver that receives electricity from the electrode and conducts electricity to the mesh basket metal.
Oil filtration system and method for automated fryer
A fryer includes a cooking chamber for holding a cooking medium, at least one heating element positioned within the cooking chamber, and a chain conveyor for selectively advancing food product through the cooking chamber along a movement path. The chain conveyor includes first and second chains coupled together by a plurality of baskets extending therebetween. The movement path includes a series of legs, including a first leg wherein the food product moves substantially vertically from above the cooking medium to a greatest depth within the cooking medium and including a second leg subsequent to the first leg wherein the food product moves substantially horizontally at the greatest depth within the cooking medium. Automated filtering systems and methods for removing debris from cooking medium are also provided.
Device and method for frying food item
Device for dispensing a food item into a hot fluid comprises a bowl having a permanent base and a movable plate positioned about the permanent base. A bottom of the bowl defines an opening for receiving a shaft extending therethrough. The shaft is coupled to the movable plate. A shank is selectively engaged with the bowl, the shank having a handle at a proximal end thereof. A lever is pivotably attached to the shank. The pivotal attachment is spaced apart from the bowl. The lever is detachably coupled to the shaft to impart translation of the movable plate. During operation, the lever is manipulated from a first position to a second position to push the shaft to move the movable plate to thereby eject the food item out of the bowl and into a hot fluid.
Flume, and Method, For Supplying Vegetable Pieces
A flume for supplying vegetable pieces in a supply of liquid, the flume extending between a flume inlet and a flume outlet, the flume comprising: a gulley section having an upstream inlet end at the flume inlet and a downstream outlet end, the gulley section having opposed sidewalls and a gulley floor therebetween, and a spreader section having opposed first and second lateral walls and a spreader floor therebetween, the spreader section having an upstream end connected to the downstream outlet end of the gulley section, the spreader section progressively increasing in width between the opposed first and second lateral walls in a downstream direction from the upstream end to a downstream end of the spreader section, wherein the opposed first and second lateral walls are each outwardly inclined away from a longitudinal axis of the spreader section by a respective angle α° for the first lateral wall and β° for the second lateral wall, in respective opposite directions, which extends from the upstream end of the spreader section to the downstream end of the spreader section, wherein the gulley section has a width of the gulley floor at the downstream outlet end of W1, the length of the spreader section between the upstream and downstream ends of the spreader section is N, and the dimensionless ratio N/W1 is within the range of from 2 to 15, and wherein the sum of α° and β° is from 10 to 25°.

An apparatus for preparing food is provided, and includes a food chamber sized to receive at least one food item, a cutting structure configured to cut the at least one food item when pressed into contact therewith, an impeller for impelling the at least one food item into contact with the cutting structure, a liquid chamber for storing a liquid, a heating system for heating the liquid, and a liquid introduction system in communication with the liquid chamber, the liquid introduction system being operable to introduce at least one of a liquid mist and a liquid spray in the food chamber.
