Automated bread-making system
An automated production system is disclosed herein. One aspect of the present technology, for example, is directed toward an automated system for the continuous production of baked bread. The system can include a priming assembly having a dry ingredients priming unit and a wet ingredients priming unit. The dry ingredients priming unit can include a vertically-oriented hopper and a screw positioned within an interior region of the hopper, wherein the first screw extends along the central longitudinal axis of the hopper and is configured to rotate about its own central longitudinal axis. The system can also include a mixing assembly, a forming assembly, an oven, and a controller. The controller can be coupled to the priming assembly and configured to adjust the amount of dry ingredients delivered from the hopper to the mixing chamber by controlling rotation of the screw.

BAKED CRISP PRODUCT FOR HUMAN CONSUMPTION
Described herein are baked crisp products for human consumption, and methods of making said baked crisp products. The baked crisp products have a sugar content of from 0 to 40%, a fat content of from 0 to 40%, and a starch content of 0 to 10% by weight. The baked crisp products comprise blended food ingredients and binder component, wherein the binder component comprises unrefined heat-treated psyllium in an amount of from 50 to 100% w/w of the binder component.
METHOD FOR PRODUCING BAKED CONFECTIONERY
A method for producing a baked confectionery, the method includes: preparing a dough of a baked confectionery, the dough containing a component (A) which is a granular product containing equal to or more than 75% by mass of starch and in which the granular product contains, as he starch, equal to or more than 3% by mass and equal to or less than 45% by mass of molecular weight-reduced starch of starch having an amylose content of equal to or more than 5% by mass, where the molecular weight-reduced starch has a peak molecular weight of equal to or more than 3×10.sup.3 and equal to or less than 5×10.sup.4, and the granular product has a degree of swelling of equal to or more than 5 and equal to or less than 20 in cold water at 25° C., and the dough having a moisture content (excluding moisture in a powder raw material) of equal to or more than 18% by mass and equal to or less than 55% by mass; and heating the dough, in which in the preparing the dough of a baked confectionery, a blending amount of the component (A) with respect to the moisture content is equal to or more than 0.01 and equal to or less than 0.24, in terms of a mass ratio.
METHOD FOR PRODUCING BAKED CONFECTIONERY

METHOD AND PRODUCT FOR IMPARTING THE TEXTURE OF FRESH FOODS TO FROZEN FOODS
A method of preparing a food item from a frozen dough includes thawing the frozen dough, mechanically agitating the thawed dough, forming the thawed dough into cooking portions, and cooking the cooking portions to obtain the food item. The method may also include the step of providing frozen flavoring ingredients, thawing the flavoring ingredients, and mixing the flavoring ingredients with the thawed dough during the mechanical agitation step. A product is provided that includes the frozen dough and the flavoring ingredients, the product being adapted to keep the frozen dough separate from the flavoring ingredients. Methods of making the product are also provided.
METHOD AND PRODUCT FOR IMPARTING THE TEXTURE OF FRESH FOODS TO FROZEN FOODS
A method of preparing a food item from a frozen dough includes thawing the frozen dough, mechanically agitating the thawed dough, forming the thawed dough into cooking portions, and cooking the cooking portions to obtain the food item. The present invention relates to a new process to prepare heat treated cereal based food products enriched in certain flavours and to the heat treated cereal based food products obtainable by this process. Additionally, the present invention relates to a process to generate a pre-reacted fraction and to the pre-reacted fraction itself. Such pre-reacted fraction can be used in the process of the invention to prepare heat treated cereal based food products.

METHOD FOR MAKING AN ARTISANAL LOOKING PIZZA DOUGH CRUST
The present invention relates to a method for making an artisanal looking pizza dough crust comprising the step of placing a bread-type dough ball onto a flat surface and pressing said dough ball with a heating plate, wherein the flat surface and the heating plate do not form a cavity or contained area under the press, wherein the flat surface and the heating plate do not have a groove, gutter, indentation or protrusion for forming a rim of the dough upon pressing, and wherein the surface area of the heating plate is smaller than the surface area of the dough after pressing. A further aspect of the invention pertains to the pizza obtained by said method.
