In a hollow cylindrical housing which stores a coolant, a feeding device having a rotating shaft and spiral screw vanes fixedly installed on the periphery of the rotating shaft is provided. At least one first diffusion nozzle is provided in each pitch of the screw vanes on the inner wall of the housing. A pair of second diffusion nozzles are provided for every pitch of the screw vanes on the outer periphery of the rotating shaft respectively at different positions in the axial direction of the rotating shaft and at mutually opposite positions in the circumferential direction of the rotating shaft. The first diffusion nozzles are supplied with wash water through a high-temperature water piping provided on the upper outside of the housing, while the second diffusion nozzles are supplied with wash water through a channel formed in the interior of the rotating shaft.

Method Of Sanitizing A Surface

A method of sanitizing a surface is described that includes: (a) providing a pH control composition that includes at least one pH control agent (such as sodium bisulfate); (b) contacting a first feed aqueous stream with the pH control composition, thereby forming a first treated aqueous stream; (c) combining at least a portion of the first treated aqueous stream with a feed sanitizing aqueous stream that includes free available halogen, thereby forming a treated sanitizing aqueous stream that includes free available halogen (such as free available chlorine). The surface sanitizing method further includes, (d) elevating the temperature of the treated sanitizing aqueous stream, thereby forming a heated treated sanitizing aqueous stream having an elevated temperature that includes free available halogen. The heated treated sanitizing aqueous stream is applied to a surface to be sanitized (such as a poultry carcass surface).

POULTRY FEET STERILIZER

The sanitizer includes an elongated semi-cylindrical tank that houses heated process water and a close-fitting auger to move food products from the inlet end of the tank to the outlet end. Heated process water at a temperature sufficient to sanitize the food product is introduced into the tank at the outlet end of the tank to flow through the tank counter to the direction of flow of the food product. A recirculation and filter system filters out the particulates in the process water. A hood assembly is positioned over the tank to contain the air borne moisture generated during the sanitizing process and route the steam away from the tank. A control system controls the operation of the sanitizer, including, for example, the speed of the auger, the volume of process water in the tank, and the temperature of the process water in the tank.

A tunnel 2 for the in-line anti-bacterial treatment of plucked poultry carcasses (or other animal carcasses) with a liquid cryogen or a cold gas at a temperature of less than 0 C. has an entrance 18 and an exit 20 for the poultry carcasses. A monorail conveyor 22 extends from the entrance 18 to the exit 20 and passes thorough the tunnel 2. Poultry suspension shackles 24 are able to pass along the conveyor 22. Thus, poultry carcasses are able to be conveyed through the tunnel 2. The conveyor 22 may follow a path which reverses direction at least once.

A hide-on washer module includes striker assemblies mounted for vertical displacement from hydraulic cylinders. When each hydraulic piston reciprocates vertically, the striker assemblies and T-shaped tracking plates are displaced concomitantly. A first set of roller assemblies engages a first tracking plate, a second set of roller assemblies engages a second reciprocating tracking plate, a third set of roller assemblies are mounted to the rear side of a front column, a fourth set of roller assemblies are mounted to the front side of a rear column, a fifth set of roller assemblies is mounted to the rear side of a front column, and a sixth set of roller assemblies is mounted to the front side of a rear column. Each roller assembly is biased to bear against its associated tracking plate.

The present disclosure relates to a novel method for rendering slaughtered poultry (mainly chicken and turkey) kosher following the Jewish Kashrut laws. More particularly, the method concerns the salting and washing processes the slaughtered poultry go through prior to packaging and marketing as Kosher foods. During the novel koshering process the birds are hung on stripes, keeping them from touching and salting each other. The end product of the disclosed method of the current application is a Kosher bird that contains less salt, compared to other traditional standard koshering techniques.
