An oil-in-water type composition which can provide a chewy texture both in a non-cooked state and a heated state and does not show water/oil separation, including: an alkyl cellulose, a 1% by mass aqueous solution of which has a viscosity at 20° C. of from 4,000 to 11,000 mPa.Math.s when measured with a Brookfield type viscometer and a 1.5% by mass aqueous solution of which has a storage modulus G′ (65° C.) at 65° C. of from 2,500 to 4,500 Pa; an edible oil or fat; and water. Also provided is a food using the alkyl cellulose.

Co-attrited stabilizer composition having superior gel strength
The present invention is directed to a co-attrited stabilizer composition comprising: a) microcrystalline cellulose in an amount of from 20%-90% by weight of the composition; b) a hydrocolloid in an amount of from 5%-50% by weight of the composition, wherein the hydrocolloid is selected from at least one member of the group consisting of carboxymethyl cellulose having a degree of substitution of at least 0.95, pectin, alginate, carrageenan, xanthan gum, agar gum, wellan gum, or gellan gum; and c) a starch in an amount of from 5%-50% by weight of the composition, wherein the stabilizer composition has a gel strength (G′) of at least 25 Pa when measured after 24 hours in a 2.6% solids water dispersion at 20° C. The composition is useful as a stabilizer, particularly in food and beverage products.

A process for preparing an aqueous solution of a methylcellulose having anhydroglucose units joined by 1-4 linkages wherein hydroxy groups of anhydroglucose units are substituted with methyl groups such that s23/s26 is 0.36 or less, wherein s23 is the molar fraction of anhydroglucose units wherein only the two hydroxy groups in the 2- and 3-positions of the anhydroglucose unit are substituted with methyl groups and wherein s26 is the molar fraction of anhydroglucose units wherein only the two hydroxy groups in the 2- and 6-positions of the anhydroglucose unit are substituted with methyl groups, comprises the step of mixing the methylcellulose with an aqueous liquid at a temperature of not higher than 10° C. at a shear rate of at least 1000 s.sup.−1.

The present invention further provides a binder composition comprising a first binder and a second binder, wherein the first binder comprises, by dry weight based on total dry weight of the binder composition, from 5% to 98% polymer particles, from 0.3% to 20% a first polysaccharide, and from 0.1% to 20% a colorant; and the second binder comprises, by dry weight based on total dry weight of the binder composition, from 0.05% to 5% a crosslinker. The present invention further provides a paint formulation comprising the binder composition.
