SYSTEM AND METHOD FOR ACCELERATING THE MATURATION PROCESS OF AN ALCOHOLIC BEVERAGE
A system and method is disclosed for accelerating the maturation of an alcoholic beverage including distilled spirits (e.g., whiskey or bourbon). The system and method may comprise assembling a maturation stave from at least one species of wood. The maturation stave may be charred, and the char removed a predetermined number of times. The char may be removed by brushing along the grain of the wood. The maturation stave may then be placed within a container (e.g., a glass bottle) that includes the alcoholic beverage until the distilled spirit has reached a predetermined maturation level (e.g., alcoholic beverage has achieved a given color, smoothness, flavor, or taste). It is also contemplated the container may be heated and cooled a predetermined number of timed-temperature cycles until the alcoholic beverage has reached the predetermined maturation level.
Alcohol Aging Assembly
An alcohol aging assembly for rapidly aging distilled spirits includes an aging container for containing alcohol. A cylinder comprised of copper is provided which can be submerged in alcohol without imparting an unpleasant flavor to the alcohol. A plurality of dowels is each of the dowels is disposed within the cylinder and each of the dowels is comprised of oak to facilitate a chemical process to enhance the flavor and color of the alcohol. A light emitter is disposed inside of the cylinder to emit light into the alcohol when the cylinder is submerged into the alcohol. The light emitter emits light in the ultra-violet spectrum to increase the rate of chemical reaction between the alcohol and the dowels thereby speeding up the process of aging the alcohol.

An alcohol aging assembly for rapidly aging distilled spirits includes an aging container for containing alcohol. A cylinder comprised of copper is provided which can be submerged in alcohol without imparting an unpleasant flavor to the alcohol. A plurality of dowels is each of the dowels is disposed within the cylinder and each of the dowels is comprised of oak to facilitate a chemical process to enhance the flavor and color of the alcohol. A light emitter is disposed inside of the cylinder to emit light into the alcohol when the cylinder is submerged into the alcohol. The light emitter emits light in the ultra-violet spectrum to increase the rate of chemical reaction between the alcohol and the dowels thereby speeding up the process of aging the alcohol.
COCKTAIL SMOKING CHIMNEYS HAVING REPLACEABLE, INTERCHANGEABLE PARTS FOR MODIFYING THE FLAVOR, VOLUME AND PATTERN OF SMOKE INFUSED INTO BEVERAGES
A cocktail smoking chimney for infusing smoke into beverages has replaceable parts. The cocktail smoking chimney includes a sealing base having top and bottom major surfaces one or more smoke transfer openings extending between the top and bottom major surfaces. A chimney stack has an upper end, a lower end with a bottom major surface, and a central opening extending from the upper end to the lower end. The central opening of the chimney stack is aligned with the one or more smoke transfer openings of the sealing base. A porous screen is disposed inside the central opening of the chimney stack. One or more fastening elements have a first configuration for securing the chimney stack to the sealing base and a second configuration for releasing the chimney stack from the sealing base so that a replacement chimney stack can be secured to the sealing base.

System and method for the rapid aging of a distilled ethyl alcohol with RF energy and wood material supporting platform
Provided is a system and method for rapid aging of distilled ethyl alcohol. The system includes a vessel with at least one aperture for introducing RF energy at a preselected frequency to be absorbed by opaque material in a target area; at least one liquid circulating system; and a platform to substantially contain a plurality of units of wood as the opaque material. Each unit of wood has a plurality of capillaries containing at least wood sugar and resin. The system has a wood agitation system to move the wood through the target area. An RF generator provides constant RF energy at the predetermined frequency to induce oscillation of molecules within the wood. The system has an oxygenator to provide oxygen into the liquid mixture and outgas congeners from the liquid, the vessel further providing at least one vent structured and arranged to vent the outgassed congeners.

METHOD FOR MANUFACTURING RAPIDLY AGED SPIRITS
A method for producing a rapidly aged spirit is provided that blends a young spirit with an aged spirit and accelerates the formation of flavor compounds through the addition of heat and oxygen in the presence of wood adjuncts over time. Chemical analysis of selected flavor compounds informs the termination of the aging process and can produce a rapidly aged spirit that presents the flavor characteristics and flavor compounds of a mature barrel aged spirit in significantly less time. Contribution of flavor compounds from barrel aged spirits compliments the oxidation of flavor compounds to more complex or long chain molecules.
