A cartilage cutting device for a bone-in meat according to an embodiment includes a cutting blade disposed on a conveying path for a bone-in meat and an elastic support portion for elastically supporting the cutting blade so that the cutting blade can recede by a reaction force applied to the cutting blade when cutting the bone-in meat. The elastic support portion is configured such that an elastic supporting force of the elastic support portion is switchable between a first elastic supporting force and a second elastic supporting force. The first elastic supporting force is capable of cutting a cartilage adhering to a bone part of the bone-in meat. The second elastic supporting force is smaller than the first elastic supporting force and is incapable of cutting the cartilage.
APPARATUS, SYSTEM, AND METHOD FOR HIGH SPEED PRODUCTION OF FOOD PRODUCT
The present disclosure provides a mechanical system for providing a food product on a sheet of paper. The disclosed mechanical system includes an adjustable conveyor belt system that is configured to enable a puck of food product to land up-right. The angle (e.g., slope) of the adjustable conveyor belt system can be adjusted to account for variations in the size and shape of the puck. The disclosed mechanical system also includes a flattener that is configured to provide memory to the pressed pucks.

A system 10 for analyzing and trimming pork bellies and other three-dimensional food and non-food products which are to be subsequently portioned or sliced so as to achieve an optimum harvest of slices from the food product bearing in mind achieving a maximum yield together with a desired quality level of the portions/slices. The system 10 includes a conveyor 12 for carrying the workpieces (WP) to be trimmed prior to subsequent slicing of the workpiece past a scanning system 14 for scanning the workpiece WP to ascertain the physical characteristics of the workpiece, including, for example, its three-dimensional shape as well as its position on the conveyor. A cutting station 16 trims the workpiece WP into a desired two-dimensional shape which represents an optimum shape for the workpiece that seeks to maximize the harvest of slices from the workpiece while maintaining a desired quality level for the slices. A slicing station uses high speed cutters or slicers for portioning/slicing the workpiece into portions/slices which have been simulated by a processing system 18 employing a processor or computer 20.

Inline Cutting System for an Extruded String of Meat Analogue Product, Method for Inline Cutting an Extruded String of Meat Analogue Product and Use of Such Inline Cutting System
There is described an inline cutting system comprising an extruder having an outlet, an outlet line connected with the extruder outlet. The outlet line comprises a side wall surrounding an internal passage. Cutting means is arranged in connection with the out-let line. The extruder is arranged for continuously producing a meat analogue product and the extruded string of meat analogue product is cut into meat pieces by the cutting means. The cutting means is extending through the side wall of the outlet line and extends in-side said internal passage. The cutting means comprises at least one cutting edge which is pointed in a substantial axial direction of the outlet line in order to establish a cutting in the longitudinal direction of the string of meat analogue product. The ex-truder and the outlet line forms a closed enclosure upstream of the cutting means.

An elastic support device according to an embodiment includes: a first member including a first magnet; and a second member including a second magnet, disposed so as to face the first member, and movable relative to the first member in response to receipt of an external force.
