A method and system of removing meat from a bone of a carcass leg part, includes the subsequent steps of: a) holding, by a support device, of the leg part, b) moving a meat removing device: into a pre-cut, c) then away from the support device along the bone to a first end position so that meat is removed from the bone, d) then away from the bone, forcing meat away from the bone and severing further meat from the bone, e) then towards the support device, f) and then towards the bone, g) and then again away from the support device along the bone to a second end position distanced further from the support device than the first end position so that further meat is removed from the bone.
Elastic support device
An elastic support device according to an embodiment includes: a first member including a first magnet; and a second member including a second magnet, disposed so as to face the first member, and movable relative to the first member in response to receipt of an external force. A magnetic force acting between the first magnet and the second magnet holds the second member in an original position when the second member does not receive an external force, and the magnetic force returns the second member to the original position when the second member is moved due to receipt of an external force.

A separating machine separates a food source material into first and second food portions. The separating machine a separating arrangement with a roller assembly; a belt assembly including a belt; a drum assembly including a drum, and holes extending between the surfaces of the drum. The drum assembly is arranged proximate to the belt assembly to define a separation area. A cartilage cutting device for a bone-in meat according to an embodiment includes a cutting blade disposed on a conveying path for a bone-in meat and an elastic support portion for elastically supporting the cutting blade so that the cutting blade can recede by a reaction force applied to the cutting blade when cutting the bone-in meat. The elastic support portion is configured such that an elastic supporting force of the elastic support portion is switchable between a first elastic supporting force and a second elastic supporting force. The first elastic supporting force is capable of cutting a cartilage adhering to a bone part of the bone-in meat. The second elastic supporting force is smaller than the first elastic supporting force and is incapable of cutting the cartilage.

A processing system for bone-in limb meats according to an embodiment includes: a right-limb incision-forming portion for forming incision on a right bone-in limb meat; a left-limb incision-forming portion for forming incision on a left bone-in limb meat; a processing line including a plurality of processing stations to separate a bone part and a meat part of each bone-in limb meat on which incision is formed at the right-limb incision-forming portion or the left-limb incision-forming portion; and a loading portion arranged at an uppermost stream part of the processing line to receive the right bone-in limb meat with incision formed at the right-limb incision-forming portion and the left bone-in limb meat with incision formed at the left-limb incision-forming portion.
