A method of separating a poultry leg into its constituent thigh and drumstick includes bending the leg at the knee to impart stress to the tissue surrounding the knee knuckle and urge the end of the drumstick bone away from the end of the thigh bone. Further stress is imparted and the bones are further urged apart by pushing the top of the drumstick in a direction opposite the knee. The tissue above the knee is then pushed up and the tissue below the knee is pushed down to maximize tension in the tissue and move the ends of the bones apart as far as possible without tearing the tissue. The tissue at the knee is then progressively sliced by a rotary cutter. The initial slice relieves tension in the tissue causing it to pull apart and move the ends of the bones further apart. The slice is then completed between the now spaced apart ends of the bones to separate the thigh from the drumstick without producing bone shards and splinters that can contaminate the meat of the thigh and the drumstick. An apparatus for performing the method is disclosed.

The at least one poultry leg is positioning such that it is lined-up for a longitudinal cutting engagement by the directionable knife (73), and the directionable knife (73) is brought into cutting engagement with the thus positioned poultry leg. During cutting engagement, position and cutting direction of the directionable knife are continuously adjusted to follow the contour defined by the bone structure of the poultry leg, while the positioned poultry leg is conveyed past the directionable knife (73).

At least one cutting unit (1) with a directionable knife (73) is provided in the pre-defined path of conveyance (21). A method of processing a poultry carcass includes exposing an area of tissue between a leg and the carcass, cutting the tissue between the leg and the carcass where the muscle tissue connecting the leg to the back of the carcass remains intact, and separating the leg bone from the carcass with the leg muscle tissue remaining connected to the back muscle tissue. The cut extends between about 0.1 mm to about 7.0 mm below the surface of the tissue. In an implementation, the teres ligament is cut.

The processing system has transfer stations arranged in succession along a main conveyor line, in which the poultry bodies are transported in a suspended manner by carrier devices. Each processing device is assigned a transfer station which is formed by a transfer pair having two rotary transfer devices. The second rotary transfer device removes the processed poultry bodies from the processing-holding means of the processing device and transfers them to the carrier devices. Each carrier device has a pair of carriers with receivers for limbs of the poultry body and comprises a carrier-control device. Each carrier is configured with a controllable holding device which is connected with the carrier-control device via a control element that controls a holding member of the limb receiver. The limb receiver is open in an open position of the controllable holding member for the clamping-free insertion and removal of the poultry body limbs. The poultry-processing device has a processing-control device with which the processing-holding means is connected and is controllable along its circular path, namely in a starting position for receiving a poultry body, at least one processing position, and an end position for removing the poultry body.

The rollers may be arranged to stop rolling after gripping the skin to hold the skin in the nip and may be equipped to subsequently move away from the poultry leg so as to pull the skin loose from the poultry leg The rollers can be configured to enable rotation in one direction only so that after the rollers have stopped rolling to hold the skin in the nip between the rollers, the rollers are blocked from rotating in a counter direction.
