Method Of Sanitizing A Surface
A method of sanitizing a surface is described that includes: (a) providing a pH control composition that includes at least one pH control agent (such as sodium bisulfate); (b) contacting a first feed aqueous stream with the pH control composition, thereby forming a first treated aqueous stream; (c) combining at least a portion of the first treated aqueous stream with a feed sanitizing aqueous stream that includes free available halogen, thereby forming a treated sanitizing aqueous stream that includes free available halogen (such as free available chlorine). The surface sanitizing method further includes, (d) elevating the temperature of the treated sanitizing aqueous stream, thereby forming a heated treated sanitizing aqueous stream having an elevated temperature that includes free available halogen. The heated treated sanitizing aqueous stream is applied to a surface to be sanitized (such as a poultry carcass surface).

The systems and methods can include calculating a dwell time or density of workpieces in a vessel; and modulating the one or more conditions of the system based on the dwell time or density of workpieces in the vessel. In an example, the system includes a vessel configured to carry a working fluid and a plurality of workpieces at least partially submerged in the working fluid; a delivery train configured to introduce workpieces into the vessel; a first counting sensor configured to generate an entrance signal based upon a workpiece introduced into the vessel; a transport train configured to transport workpieces introduced into the vessel to an exit of the vessel; a removal train configured to remove workpieces from the vessel through the exit; and a second counting sensor configured to generate an exit signal based upon a workpiece removed from the vessel through the exit.
SCRAPER APPARATUS
A scraper apparatus according to at least one embodiment of the present disclosure includes a pair of scrapers disposed opposite each other in a perpendicular direction to a conveying direction of a poultry carcass held by a holder and configured to remove meat attached to a processed portion of the poultry carcass by putting the processed portion between the pair of scrapers. The scraper apparatus according to at least one embodiment of the present disclosure includes a support part which supports the pair of scrapers so as to allow displacement of the pair of scrapers in the perpendicular direction to follow the shape of the processed portion of the poultry carcass moving in the conveying direction.
Machine and method for cleaning poultry offal
The present invention relates to an apparatus M for cleaning poultry giblets X. These giblets X enter the apparatus M through an inlet gutter M0 and are dispensed through an outlet gutter M6. The apparatus M comprises pre-cleaning rollers 3 and 4 arranged under a guiding assembly M1 that directs the giblets X to a gripping and transporting conveyor chain M2 for transporting the giblets X from the pre-cleaning rollers 3 and 4 to a pressing assembly M5, passing through a cutting element M3 and a washing assembly M4 for the giblets X. The apparatus M also comprises a gutter 6 that directs the giblets X to a cleaning system L installed transversely in the apparatus M, enabling the traction of these giblets X from the gutter 6 to the outlet gutter M6. In addition, the invention also describes a method for cleaning poultry giblets X, applied in the apparatus M.
Surface Treatment for Steel to be Used on Meat and Poultry Processing Equipment
A method of treating a surface of a poultry processing conveyor includes assembling the conveyor and bead blasting at least one surface of the conveyor to reduce a surface roughness of the surface. The surface of the conveyor may be bead blasted with glass beads. The glass beads may be All-sized glass beads. The bead blasting of the surface may be conducted at a pressure of approximately 60 psi. The bead blasting of the surface may be directed at a 45-degree angle relative to the surface of the conveyor. The method may further include applying a hydrogen peroxide solution to the surface after the conveyor has been bead blasted. The method may further include shrink-wrapping the conveyor after the conveyor has been bead blasted.

In certain embodiments, the systems and methods of the present disclosure include calculating a dwell time or density of workpieces in a vessel; and modulating the one or more conditions of the system based on the dwell time or density of workpieces in the vessel.
Method of Injection of an Antimicrobial Composition for Rapid Cooling of Poultry During Processing
A method for rapidly cooling poultry carcasses during processing by injecting the carcasses with a composition including water and an antimicrobial agent. The composition may be in slush ice form or liquid form. The antimicrobial agent, such as peroxide, plays a critical role in this method. The antimicrobial agent serves to lower the freezing point of the chilled water of the composition below 32 degrees F., which allows greater heat exchange when the chilled water composition is injected into the warm interior of the carcasses. The antimicrobial agent also prevents bacterial contamination of the carcasses as a result of the possible transfer of bacteria from the exterior surface of the carcasses into the interior of the carcasses during injection.
POULTRY FEET STERILIZER
The sanitizer includes an elongated semi-cylindrical tank that houses heated process water and a close-fitting auger to move food products from the inlet end of the tank to the outlet end. Heated process water at a temperature sufficient to sanitize the food product is introduced into the tank at the outlet end of the tank to flow through the tank counter to the direction of flow of the food product. A recirculation and filter system filters out the particulates in the process water. A hood assembly is positioned over the tank to contain the air borne moisture generated during the sanitizing process and route the steam away from the tank. A control system controls the operation of the sanitizer, including, for example, the speed of the auger, the volume of process water in the tank, and the temperature of the process water in the tank.
Heat Processor for Raw Poultry Products
A method of processing raw poultry parts to produce a product continuing to qualify as a raw food product, including killing pathogens by increasing the core temperature to a regulatory-required temperature for a regulatory-required duration using mist heated to a temperature not denaturing or deforming the product skin in a manner resulting in a product continuing to have the appearance of a raw delicacy product. Included is an apparatus implementing said method, including a diagonally ascending heating track or chamber substantially filled with a screw auger conveying the poultry parts through the heating process, and a diagonally descending exit chute whereby the heat-processed parts exit the apparatus for final processing for packaging. Also included is a sub-system for recovering and re-using the misting liquids and other liquids exiting the parts, including filtration en route to a reservoir supplying the media for heating for misting the poultry parts.
