Each carrier is configured with a controllable holding device which is connected with the carrier-control device via a control element that controls a holding member of the limb receiver. The limb receiver is open in an open position of the controllable holding member for the clamping-free insertion and removal of the poultry body limbs. The poultry-processing device has a processing-control device with which the processing-holding means is connected and is controllable along its circular path, namely in a starting position for receiving a poultry body, at least one processing position, and an end position for removing the poultry body.
