Apparatus for cutting fish fillets from flank bones, filleting apparatus with such an apparatus, and method for cutting fish fillets from flank bones
Filleting apparatus for cutting fish fillets from flank bones. The fish fillets been processed by a ventral knife assembly and a dorsal knife assembly. A conveying apparatus, transporting fish tail-first in transport direction, having an endlessly circulating transport conveyor with at least one transport saddle receiving/securing a fish, a flank knife assembly with two flank knife units, opposing each other on both sides of the transport conveyor in the region of a transport saddle guide. Each flank knife unit has a rotatably drivable circular knife and counter-surface arrangement Circular knife is arranged at a distance from the counter-surface arrangement to form a cutting gap and a control device moves flank knife units relative to the transport conveyor from standby position into working position and back. The counter-surface arrangements vary the size of the cutting gap controllably during the processing operation.

Apparatus and method for transferring articles of the fish and meat processing industry to a predetermined end position
An apparatus and method, configured for transferring articles of the fish and meat processing industry in a predetermined end position, including a continuous conveying device with a plurality of transport sections for individually receiving the articles and movable in the conveying direction, which transport sections comprise in the conveying position a transport element pair forming two article support surfaces. Each transport element is configured to be controllably pivotable about axles, running in the edge region of the respective transport section, so that the articles (10) are transferred to the predetermined end position, under the effect of gravity, in a plane lying below the conveying plane by controlled pivoting of both transport elements while retaining the article orientation or by controlled pivoting of one of the respective transport elements of one of the respective transport element pairs while changing the article orientation.

A PIN BONE REMOVAL APPARATUS
A pin bone removal apparatus is provided for removing pin bones in fish fillets while a conveyor conveys the fish fillets at a first conveying speed. A plurality of pin bone removal units is provided, each having a pin bone roller for pulling the pin bones from the fish fillets. The apparatus includes a closed-loop rail structure on which the pin bone removal units are slideable attached, where the closed-loop rail structure comprises a processing section and a returning section. The processing section is where at least one of the plurality of pin bone removal units is moved parallel to the fish fillets at a second conveying speed and engages with the surface of the fish fillets. After the pin bone removal the at least one pin bone removal unit is recirculated along the returning section.

Gutting Machine and a Method for Gutting Fish in a Gutting Machine
Gutting machine for fish, comprising a conveyor belt to receive fish, where the fish is placed with the abdomen facing a number of cutting and cleaning tools for gutting and cleaning of the fish when it is transported on said conveyor belt, in which said conveyor belt is equipped with a number of holding devices where respective holding devices are adapted for firmly holding the fish, and that one or more barriers arranged adjoining said conveyor belt are adapted to slow down the movement of the fish until the fish is firmly held in a respective holding device and is brought by the conveyor belt in its direction of movement. Also described is a method for gutting the fish in a gutting machine.
