A frozen product of minced fish meat frozen into granules includes: 90 wt % or more of meat granules having a substantially columnar shape with a 3 mm to 7 mm diameter; and 10 wt % or less of meat granules with a short diameter of 2 mm or less. A method of producing the minced fish meat frozen into granules includes: raising the temperature of fish meat which has been frozen at −20° C. or less to a temperature of from −10° C. to −5° C.; mincing the fish meat while maintaining the temperature of the fish meat at −10° C. to −5° C. by using a meat mincer having a feed screw, a plate, and a plate knife at a rotation speed of 200 rpm or less; lowering the temperature of minced fish meat to −20° C. or less; and crushing the minced fish meat frozen at −20° C. or less into granules.

A pair of grapples is each removably coupled to the platform. Each of the grapples releasably engages a top pier rail having the platform being horizontally oriented on the top pier rail. In this way a fish can be positioned on the platform for filleting the fish. A pair of legs is each pivotally coupled to the platform. Each of the legs extends downwardly from the platform when the legs are positioned in a deployed position. In this way each of the legs abuts horizontal pier rails thereby retaining the platform in the horizontal orientation. A clamp is pivotally coupled to the platform to engage the fish for retaining the fish on the platform for filleting the fish.

The systems may include a tray secured within the enclosed portioner housing beneath the at least one liquid jet cutter and the conveyor, the tray being downwardly angled and configured to direct a waterjet of the liquid jet cutter toward a low pressure plenum chamber positioned external to the first side wall of the enclosed portioner housing.
