Methods and devices for heating or cooling viscous materials
The invention provides methods and devices for heating or cooling viscous materials such as meat emulsions useful for producing food and other products. The devices include a heat exchanger comprising a first plate, a second plate attached to the first plate, and a first spacer and a second spacer arranged between the first plate and the second plate. The first plate, the second plate, the first spacer, and the second spacer define at least one temperature controlled passage for a product to pass through the heat exchanger.
Process for the continuous production of pasteurized dried minced meat, reconstituted in the form of thin slabs, and unit for carrying out said process
A process for manufacturing minced meat includes ensuring the continuous shaping of the said minced meat into the form of a flattened strip; placing the flattened strip of meat between two sheets of controlled permeability film; evening out the thickness and spreading the minced meat placed between the two sheets; continuously unrolling the meat strip in a bath of a dehydration-salting solution; continuously unrolling the meat strip in a bath of a pasteurization solution; continuously unrolling the meat strip in a rinsing tank; removing the sheets after removal from the rinsing tank; and transporting the meat strip to an output conveyor.
Method of producing cellulose encased sausages
A method of producing cellulose encased sausages where an encased sausage is partially cooked, the partially cooked sausage is hot peeled, and the cooking of the peeled sausage is finished in its packaging.
Method of producing cellulose encased sausages
The invention relates to a method for producing preformed peeled packed sausages, comprising the steps of subsequently: A) heating an encased sausage; B) peeling a casing from the sausage at higher surface temperatures; and C) packing the peeled sausage. The invention also relates to a production device for producing preformed peeled packed sausages with such a method.
THAWING PLANT AND THAWING METHOD OF RAW FROZEN MEAT PRODUCTS IN A DRUM TUMBLER
Thawing plant comprising a drum tumbler (10) hermetically sealable; a vacuum pump (11) connected to said drum tumbler (10) to create a partial vacuum defined below 125 mbars; a water steam injector (12) connected to said drum tumbler (10); a rotating device (13) connected to the drum tumbler (10) to produce its continuous or intermittent rotation; wherein it further comprises a deep diathermy heating applicator (20) including multiple directional emitter antennas (21) configured to apply radiofrequency waves in a medium frequency range configured and focused to produce an uneven heating of the meat product (30) maximizing the heating of an inner volume (33) of the meat product (30) at a predefined depth below an external surface (31) of said meat product (30).
PRODUCTION OF PRECOOKED FORMED MEAT PATTIES
A cold forming process for forming a meat patty includes heating a ground meat product to a temperature T.sub.1, wherein T.sub.1≤40° F. The ground meat product is formed into an uncooked patty at temperature T.sub.1. The uncooked patty is precooked to form a precooked patty having a skin of depth D comprising denatured protein. The skin is formed on at least an area on the outside of the precooked patty. At least a first portion of the meat product disposed beneath said skin is at approximately T.sub.1. The precooked patty is cooked to form a cooked patty, wherein said at least a first portion of the meat product is at a temperature T.sub.2. The cooked patty is then frozen and then packaged.
