Sensor stations and related systems and methods to monitor and measure properties of food products in food processing structures such as cure rooms, smokehouses, ovens, and related structures. The sensor stations allow real-time, local collection of product properties and their surrounding environmental conditions in order to improve efficiency, reduce product waste and guesswork, and to provide data-based analysis for decision making. Sensor stations can be mounted to food supports and can be in electronic communication with each other and with intermediate nodes that provide a connection to other external computing devices that provide analysis and alerts to users and technicians. Various non-destructive modeling systems for determining water activity and pH of changing products are also provided.

In some implementations, the vertical smoker and cooker may be configured to protect the contents of the cooking chamber from direct exposure to the radiant heat coming from the fire box and prevent meat drippings from falling into the fire box. In some implementations, the vertical smoker and cooker may comprise a housing having an interior cooking chamber accessible through a first door, and a fire box chamber accessible through a second door, and an array of drip guides positioned between the cooking chamber and the fire box chamber.

The smoker device rests on a grilling surface of a cooking unit. A perforated chimney box is fixably mounted inside the interior chamber, with a removable chip box positioned at the bottom of the chimney box, and a hinged hatch at the top. Removable food racks and a vessel for liquids may also be present inside the interior chamber. An adjustable air damper allows air exchange between the interior chamber and ambient air. The device allows an existing outdoor cooking unit to convert to a multi-rack vertical smoker.
