Processing of agricultural products using radiofrequency
A radiofrequency heating system and methods for processing agricultural products are provided herein. The method may include positioning an agricultural product between two electrode assemblies of a radiofrequency (RF) circuit, closing the RF circuit, and heating the agricultural product to a threshold temperature in greater than a threshold amount of time.
SYSTEMS AND METHODS FOR ACCLIMATIZING FOOD
A method of acclimatizing dates includes placing a plurality of dates into a vacuum chamber, heating the dates to a first temperature, and increasing a vacuum pressure of the vacuum chamber with the dates in the vacuum chamber. The first temperature is below a boiling point of water at an initial pressure within the vacuum chamber and the increase in vacuum pressure modifies the boiling point to below the first temperature. The method includes adjusting a relative humidity of the vacuum chamber towards a target relative humidity until the plurality of dates reach an equilibrium relative humidity, the target relative humidity corresponding to a target moisture content of the dates on an isotherm of the dates at the first temperature. The method includes cooling the dates to a second temperature to stop transpiration of water within the plurality of dates and decreasing the vacuum pressure of the vacuum chamber.

Method of dehydrating wine grapes and other foods
A method of dehydrating fruit, comprising providing at least one cluster of fruit attached to stems and the stems attached to a branch; a first heating step comprising heating the least one cluster of fruit at a temperature in a range of 100-200 degrees F. for a period of time in a range of 1-24 hours; and a first curing step comprising allowing the at least one cluster of fruit to cool to room temperature over a period of time whereby dehydrated fruit is obtained.
VAPOR PRESSURE CONTROL SYSTEM FOR DRYING AND CURING PRODUCTS
A system to control the conditions of an aging room, also known as a conditioned space, for products in which independent feedback loops control the dry bulb temperature and the dew point while controlling the difference between the vapor pressure in the room and the vapor pressure of the products being dried, thereby controlling the amount of and rate of water or water vapor loss of the products and, therefore controlling its quality, the system also including target controls, a thermoelectric cooler and lighting controls.
Process for improving shelf-life of fresh cut vegetables and food products produced thereby
The present disclosure relates to, inter alia, processes for improving shelf-life and flavoring of fresh-cut/fresh vegetables, as well as food products produced by these processes. In accordance with the present disclosure, the processes generally include various new combinations of steps such as blanching, air drying, supercritical fluid processing with and without a processing aid, pressurization, de-pressurization, and packaging. The present disclosure further relates to methods of preparing edible food products that incorporate the processed fresh-cut vegetables, as well as the food products produced by these methods.

A method for producing a fruit or vegetable product, wherein the method consists essentially of (a) infusing a whole or sliced fruit or vegetable with an infusible molecule to between 10 and 55 Brix; (b) pre-drying the whole or sliced fruit or vegetable at a temperature between 80 C. and 120 C. to produce a pre-dried fruit or vegetable; (c) exposing the pre-dried fruit or vegetable to freezing temperatures and to vacuum to a temperature between 1 C. and 40 C. and a pressure between 7.5 mmHg and 0.53 mmHg, thereby partially subliming the fruit or vegetable; (d) puffing the fruit or vegetable under vacuum between 0.1 mmHg and 600 mmHg at a temperature between 40 C. and 110 C.; (e) cooling the fruit or vegetable under vacuum to a temperature between 0 C. and 40 C., to thereby produce the fruit or vegetable product.

FOOD DEHYDRATOR
Apparatus and related methods for adding increased functionality to a food dehydrator through the use of stackable drying trays that define a circulation plenum during operation and then nest within one another during disassembly so as to reduce an overall storage size of the food dehydrator. The food dehydrator can further include a base portion having a removable splash guard to prevent the introduction of liquids or solids into a mechanical space within the base portion.
METHOD OF MAKING DRIED POROUS FOOD PRODUCTS
A method of making a porous, crunchy, dehydrated, vegetable, meat or seafood snack product. A piece of vegetable, such as potato, sweet potato, carrot, beet or parsnip, or a piece of meat or seafood, is frozen, forming ice crystals within the piece of food. The frozen piece is exposed to microwave radiation in a microwave-vacuum dehydrator at a vacuum pressure at which the boiling point of water is above 0 C., causing the frozen piece to thaw and water to evaporate from the thawed piece. The evaporation leaves pores that were formed by the ice crystals within the piece of food, resulting in a porous, crunchy, dehydrated snack product.
