Barrier coating compositions, wash compositions, and other compositions for perishables and methods, systems, kits, and coated perishables relating thereto are provided. Fresh fruits and vegetables, in particular, can benefit from the teachings of the present disclosure. Preferred barrier coating compositions include an active hydrogen component that preferably includes one or more of a lipid, a polysaccharide, a polypeptide, or a combination thereof. In addition to providing active hydrogen groups, the active hydrogen component preferably functions as a binder and/or barrier component. The barrier coating compositions may include one or more materials to facilitate crosslinking of the resulting coating.

EDIBLE COATING WITH ANTIMICROBIAL PROPERTIES
Presented are compositions that can be used as antimicrobial coatings or protective coatings for agricultural (e.g., food) products. The compositions can comprise one or more saturated glycerides selected from monoglycerides and diglycerides; one or more surfactants; and one or more food-safe antimicrobials. The antimicrobial coatings or protective coatings can be used to prevent or delay food spoilage due to, for instance, infection by a foreign pathogen, moisture loss, or oxidation.

METHOD OF USING BIOSURFACTANT-PRODUCING BACTERIA AGAINST FUNGAL AND BACTERIAL PATHOGENS
The disclosure provides a method of using a bacterium that is a Bacillus, Streptomyces, Microbacterium, Micrococcus, Rhodococcus, Pseudomonas, Arthrobacter or Staphylococcus and/or a biosurfactant-containing extract isolated from said bacterium, as an antimicrobial agent against a foodborne or a plant bacterial or fungal pathogen, wherein the bacterium optionally comprises at least 3 of bacilysin, difficidin, macrolactin h, bacillaene, bacillomycin d, fengycin, surfactin and bacillibactin. The disclosure also provides a plant or plant part bacterized or coated with a Bacillus or a biosurfactant-containing extract isolated from the Bacillus and a method of protecting a plant or plant part against a bacterial or fungal pathogen comprising bacterizing or coating the plant or plant part with a Bacillus or a biosurfactant-containing extract isolated from the Bacillus, wherein the Bacillus produces or the extract contains at least 3 of bacilysin, difficidin, macrolactin h, bacillaene, bacillomycin d, fengycin, surfactin and bacillibactin.
METHOD OF USING BIOSURFACTANT-PRODUCING BACTERIA AGAINST FUNGAL AND BACTERIAL PATHOGENS
The disclosure provides a method of using a bacterium that is a Bacillus, Streptomyces, Microbacterium, Micrococcus, Rhodococcus, Pseudomonas, Arthrobacter or Staphylococcus and/or a biosurfactant-containing extract isolated from said bacterium, as an antimicrobial agent against a foodborne or a plant bacterial or fungal pathogen, wherein the bacterium optionally comprises at least 3 of bacilysin, difficidin, macrolactin h, bacillaene, bacillomycin d, fengycin, surfactin and bacillibactin. The disclosure also provides a plant or plant part bacterized or coated with a Bacillus or a biosurfactant-containing extract isolated from the Bacillus and a method of protecting a plant or plant part against a bacterial or fungal pathogen comprising bacterizing or coating the plant or plant part with a Bacillus or a biosurfactant-containing extract isolated from the Bacillus, wherein the Bacillus produces or the extract contains at least 3 of bacilysin, difficidin, macrolactin h, bacillaene, bacillomycin d, fengycin, surfactin and bacillibactin.
