Directly heating a protein-enriched milk product occurs by introducing steam, the direct heating taking the form of an infusion or injection method. The described technique significantly extends service time, ensuring a content of non-denatured whey proteins in the treated protein-enriched milk product greater than that obtained in the prior art. The milk product, which is preheated and kept at temperature is indirectly cooled before direct heating by a recuperative cooling step from the preheating temperature to a cool-down temperature with a temperature difference ranging from 5 K to 10 K. The direct heating from the cool-down temperature to the high pasteurization temperature is controlled by direct heating setting parameters which are known per se. Finally, the milk product is cooled by flash cooling from the high pasteurization temperature to a necessarily required exit temperature.

The present invention relates to a method of inactivation of plasmin enzyme in a milk-based product, wherein casein and whey protein are separated from a milk raw material by microfiltration to provide a casein concentrate as a microfiltration retentate having a whey protein content of less than 20 wt. %, based on the total protein content of the concentrate, and a whey protein concentrate as a microfiltration permeate; the casein concentrate is subjected to a thermal treatment at a temperature in the range of about 72 C. to about 95 C. to provide a thermally treated casein concentrate; and a milk-based product with a reduced plasmin activity comprising the thermally treated casein concentrate is provided. The milk-based products prepared by the method retain flawless organoleptic properties at different storage temperatures even under prolonged storage periods.

System and method for aseptic and sterile packaging of low acid liquids

A system for packaging a low acid liquid is provided herein. The system includes feeding unit configured to feed the low acid liquid into a filtration unit. The filtration unit is configured to filter the low acid liquid by using a number of pores provided on a micro sieve membrane. Further, the filtered low acid liquid is provided to an aseptic buffer unit configured to fill the aseptic filtered low acid liquid into packaging containers. The system further includes an automatic cleaning in place unit configured to automatically clean the feeding unit, the filtration unit and the aseptic buffer unit by decontamination using a decontaminating material.
