Dairy compositions and method of making
The invention relates to a method of separating components from milk and utilizing the separated components to form a fermentable composition such as yogurts. The present invention relates to nutritional milk compositions and products which are designed to include per serving size a specified percentage range of one or more components separated from milk. The compositions of the present invention can optionally include non-essential but nutritionally functional components.
Fractionating milk and UHT sterilization of milk fractions
Disclosed are processes for reducing the cooked flavor, sulfur odor, and brown color of milk products that have been subjected to ultra-high temperature (UHT) sterilization via the UHT sterilization of certain milk fractions separately.

DAIRY COMPOSITIONS AND METHOD OF MAKING
The invention relates to a method of separating components from milk and utilizing the separated components to form blended dairy compositions. The present invention relates to nutritional milk compositions and products which are designed to include per serving size a specified percentage range of one or more components separated from milk. The compositions of the present invention can optionally include non-essential but nutritionally functional components.
BETA-CASEINS AND GUT MICROBIOTA
Improving the balance of beneficial gut microbiota of an animal by providing a composition containing beta-casein, wherein at least 75% by weight of the beta-casein is a beta-casein variant that has a proline at position 67 of the beta-casein amino acid sequence.
Glycelles: Methods and Compositions For Casein Micelles Comprising Non-Bioactive Hydrophilic Compounds
By integrating casein proteins with non-milk particles (for example, soy proteins), Glycelles achieve enhanced nutritional value, improved digestibility, and superior sensory attributes. This innovation addresses challenges associated with non-milk particles such as soy proteins, offering a sustainable, versatile, and healthful protein source with broad applications in the food, beverage, nutraceutical, sports nutrition, and dietary supplement sectors.

Method of glycation of a polypeptide
The present invention relates to compositions, particularly liquid compositions, comprising enzymes, methods of making the compositions, and uses of the same for making, e.g., dairy products.
A BEVERAGE PRODUCT WITH FREE DIVALENT CATIONS PROTEIN AGGREGATION AND A METHOD PRODUCING THEREOF
The invention relates to a method of producing a shelf stable ready-to-drink beverage product, comprising the steps of: providing an ingredient composition comprising micellar caseins and whey protein, having a total protein concentration of 1.5-8 wt. %, and wherein the composition has a casein to whey protein ratio of 90/10-60/40, adding divalent cations to provide a concentration of 3-20 mM free divalent cations in the ingredient composition, and 0.025-0.3 wt % of a stabilizing system comprising hydrocolloids, and subsequently heat treating the ingredient composition at ultra high temperature (UHT) at 135-150 C. for 3-30 s to form agglomerated proteins comprising casein and beta-lactoglobulin from the whey protein, the agglomerates having a size of 5-30 microns mean diameter D(4,3) as measured by laser diffraction. The invention also relates to a shelf stable ready-to-drink beverage product comprising aggregated proteins comprising micellar caseins and whey protein aggregates, wherein the product has a pH of 6.6-7.2, 1.5-8.0 wt. % milk proteins, a casein to whey protein ratio of 90/10-60/40, and a concentration of 3-20 mM divalent cations, and the aggregates are of 5-30 microns mean diameter D(4,3) as measured by laser diffraction.
DAIRY COMPOSITIONS AND METHOD OF MAKING
The invention relates to a method of separating components from milk, and the apparatus used therefor. The invention also relates to compositions prepared from the separated components. The present invention relates to nutritional milk compositions and products which are designed to include per serving size a specified percentage range of one or more components separated from milk. The compositions of the present invention can optionally include non-essential but nutritionally functional components. The complete nutritional milk compositions of the present invention can be provided as unflavored milks, flavored milks, ice creams and yogurts.
