FUNCTIONAL MUNG BEAN-DERIVED COMPOSITIONS
Provided herein are methods for producing a mung bean protein isolate having high functionality for a broad range of food applications. In some embodiments, the methods for producing the isolate comprise one or more steps selected from: (a) extracting one or more mung bean proteins from a mung bean protein source in an aqueous solution, for example, at a pH between about 6.5-10.0; (b) purifying protein from the extract using at least one of two methods: (i) precipitating protein from the extract at a pH near the isoelectric point of a globulin-rich fraction, for example a pH between about 5.0-6.0; and/or (ii) fractionating and concentrating protein from the extract using filtration such as microfiltration, ultrafiltration or ion-exchange chromatography; and (c) recovering purified protein isolate.
EMULSION FOR MODULATING SENSORY PROPERTIES IN FOODS AND BEVERAGES
Described herein is a food grade emulsion capable of modulating sensory properties in foods and beverages. The emulsion is characterized by the presence in its dispersed phase of at least one enzymatically modified lipid component. The emulsion constitutes a stable and effective flavour delivery system and can thus be incorporated as such in a food composition or a beverage composition.
MODIFIED MILK POWDER CONTAINING 1,5-ANHYDRO-D-GLUCITOL
A modified milk powder containing 1,5-anhydro-D-glucitol which is an effective component in vivo in an amount of 7.7 to 3,850 μg/g.
MODIFIED MILK POWDER CONTAINING 1,5-ANHYDRO-D-GLUCITOL
A modified milk powder containing 1,5-anhydro-D-glucitol which is an effective component in vivo in an amount of 7.7 to 3,850 μg/g.
Milk Based Compositions Comprising Milk Derived, Denatured Retentate
The invention relates to the use of milk derived, denatured retentate in the preparation of milk-based compositions, which may be aerated or non-aerated, comprise a skimmed mild source, and/or have less than 0.5% w/w fat. The milk derived, denatured retentate allows the formation of microbubbles in an aerated skimmed milk composition, and thus retains certain desirable sensory perception characteristics such as a good mouthfeel and perceived thickness.
METHOD FOR PRODUCING A READY-TO-USE, LONG-LIFE INFANT MILK
The invention relates to a method for producing a milk food made as a substitute for breast milk, in the form of a ready-to-use, long-life liquid. The invention also relates to the facility for implementing said method and to the milk food made as a substitute for breast milk produced by said method.
LACTASE SOLUTION AND MILK USING THE SAME
[Problem] To provide a means for achieving the stability of a lactase solution.
[Solution] A lactase solution, containing sugars in an amount of 0.1 to 100 g/kg on the basis of the total mass of the lactase solution, wherein an amount of reducing sugar contained in the lactase solution is 2.0 mg/g or less.

PROTEIN BASED CANNABIS COMPOSITIONS
Described herein are novel compositions comprising a cannabis component selected from the group consisting of: a cannabinoid, a flavonoid and a terpenoid; and a protein, selected from the group consisting of whey and a plant protein. According to an embodiment, the cannabis component is non-covalently bound to the whey or to the plant protein. The plant protein may be selected from the group consisting of: soy protein, pea protein, rice protein, hemp protein, and hops protein or other plant derived protein.
Methods and compositions of camel derived products
The present invention provides a composition, a dairy product, and a method for treating a disorder in a subject. The composition includes (i) polymeric nanoparticles and (ii) camel derived glycosaminoglycans (GAG)s ionic complex encapsulated into the nanoparticles, at least one active ingredient encapsulated into the nanoparticles, or combinations thereof. The nanoparticles are lactoferrin nanoparticles including camel derived lactoferrin, casein nanoparticles including camel derived casein, or combinations thereof. The dairy product includes ice cream or frozen yogurt, wherein the ice cream or frozen yogurt includes the composition and is derived from camel milk or other species of milk. The method for treating a disorder in a subject includes administering a therapeutic dose of the composition to the subject.
