SYSTEMS AND METHODS FOR FRYING FOOD PRODUCTS
Some implementations of the described methods relate to a process for frying coffee beans (and/or another food product) in a fry medium (such as cooking oil) and then centrifuging the coffee beans (and/or other food product) to remove a significant portion of the fry medium. Although the frying and centrifugation can occur in separate devices, in some cases, the described systems comprise a device that acts as both a fryer and a centrifuge. Indeed, in some cases, after the coffee beans (or other food product) has been fry roasted in a perforated container (e.g., a basket), the fry medium is drained from the container, and container is spun. In some cases, liquid nitrogen is also applied to the beans (or other food product), before and/or after being fry roasted. Other implementations are described.
SYSTEMS AND METHODS FOR FRYING FOOD PRODUCTS

APPARATUS AND PROCESS FOR ROASTING AND DISCHARGING COFFEE BEANS
The invention relates to an apparatus (1) for more convenient roasting of coffee. The apparatus (1) in particular facilitates an improved means for discharging or ejecting the so roasted coffee beans from the apparatus (1). The apparatus (1), which may be a home appliance apparatus, comprises a chamber (10) in which coffee beans can be received for roasting. The apparatus (1) further comprises a device for generating a current of air in order to agitate the coffee beans received by the chamber (10). The chamber (10) is delimited by a bottom (11), a top (12), and a sidewall (13) extending from the bottom (11) to the top (12), wherein the sidewall (13) comprises a discharge port (30), which is selectively moveable between a closed position and an open position, such that the current of air generated by the device can drive the coffee beans through the discharge port (30) to be discharged from the chamber (10), when the discharge port (30) is in the open position.
METHOD FOR ROASTING COFFEE BEANS
The invention concerns a method to determine the recipe Rym for roasting a quantity m of a type Cy coffee beans in a particular type of roasting apparatus, said recipe Rym providing setpoints (Tym@ti; ti), wherein the method comprises the steps of:—getting access to: ⋅a rule to calculate the roasting recipe adapted to the roasting of a quantity of beans, said quantity being comprised in a list of pre-determined quantities (M, M±Δx), from any pre-existing roasting recipe adapted to the roasting of another quantity of beans in said particular type of roasting apparatus, said another quantity being comprised in the list of pre-determined quantities (M, M±Δx), and to at least one pre-determined original roasting recipe RyMoriginal adapted to the roasting of one original pre-determined quantity Moriginal of the type Cy coffee beans, and—based on the comparison between m, the accessible original pre-determined quantity Moriginal and the accessible pre-determined quantities of the list (M, M±Δx), determining the roasting recipe Rym to be applied on said quantity m of coffee beans.

COFFEE BEAN ROASTING MACHINE
A coffee bean roasting machine includes a roast chamber for accommodating coffee beans, a hot blast device for supplying hot or cool air to the roast chamber, and a collection chamber for collecting the outer skins of coffee beans. The collection chamber is in communication with the roast chamber and the bottom of the roast chamber includes a first bean outlet where a chamber door is set for open and close. Coffee beans can be easily taken out from the coffee bean roasting machine, without lifting up the whole roasting machine and tipping it over.
COFFEE ROASTING SYSTEM AND PROCESS
A roaster and method for roasting coffee beans is provided, and includes a drum that extends axially along a rotational axis, and a motor that rotates the drum about the rotational axis. A bean inlet port is located adjacent to a first end of the drum, and receives coffee beans to be introduced to the drum for roasting. A heater generates a heated gas by elevating a temperature of a gas to at least a roasting temperature, and a nozzle directs the heated gas generally toward the coffee beans within the drum while the drum is rotated by the motor. A collection bin adjacent to a second end of the drum collects the coffee beans exiting the drum after the coffee beans are roasted by the heated gas while traveling through the drum between the inlet port and the collection bin.
METHOD OF ROASTING
The invention concerns a method of roasting coffee beans with a roasting apparatus (X), said roasting apparatus comprising a control system (80) configured to control the heating device (2) and to reproduce roasting recipes, said control implementing a feedback loop regulation based on the temperature Treg measured by the at least one temperature probe (5), wherein, before roasting coffee beans by reproducing coffee beans roasting recipes defined with one specific master roasting apparatus (M), the feedback loop regulation is adjusted, said operation of adjustment comprising the step applying pre-determined correction KC to the feedback loop regulation.

Provided is a novel roasting method that is effective for improving the flavor of roasted coffee beans. The present invention provides a method for producing roasted coffee beans, including a step of roasting coffee beans, wherein a ratio of lightness (lightness ratio) of the coffee beans is 0.65 or more, and a temperature increasing rate of a roasting temperature is retained at -0.15° C./second to 0.15° C./second.
