Plant powder-containing white chocolate-impregnated food and method for producing same
The present invention provides a white chocolate-impregnated food that is a porous food into which a white chocolate that contains a plant powder is impregnated. A median diameter of the plant powder is 5 to 20 m. In the white chocolate-impregnated food, the white chocolate that contains the plant powder is impregnated into inside of the porous food.
COCOA BUTTER
The present invention addresses the problem of providing, by a simple method, a method for conferring photodegradation resistance on cocoa butter, which has low photodegradation resistance. By performing degumming treatment using phospholipase, photodegradation resistance can be conferred to cocoa butter. When white chocolate was prepared using the thus-obtained cocoa butter, photodegradation was remarkably suppressed. Although any kind of phospholipase may be used, the use of phospholipase A2 is preferred as the effect therewith is particularly remarkable.
FAT COMPOSITION FOR LOW-TRANS FAT, NON-TEMPERED CHOCOLATE AND CHOCOLATE
The purpose of the present invention is to provide, as fat for non-tempered chocolate, a fat composition which can contain less trans fats and more cacao materials such as cocoa butter and cocoa mass, and has good melting and snapping properties. The present invention is accomplished on the basis of a finding that a transesterified fat having a specific fatty acid composition is effective against the problem as well as knowledge that a combination of the fat composition with a specific emulsifier is effective for the problem. The present invention provides fat for chocolate and chocolate which has a strong chocolate flavor and good melting and snapping properties such that health risks linked to trans fats can be avoided.
Method for manufacturing an embossed decorative element and confectionary article with an embossed decorative element
The invention relates to the production of confectionary articles with a shaped ornament or with a single-colored or multi-colored embossed design on one of the surfaces of the article. The main characteristic of the present invention consists in that a prepared chocolate/chocolate-like mass is fed into a full-scale mold in a dispersed dropping state through a nozzle at a drip rate ensuring plastic deformation of the drops as the drops slow down. The technical result of using the proposed invention is an increase in the quality of confectionary articles with a three-dimensional embossed decorative design.

PROCESS FOR PRODUCING A CONFECTIONERY PRODUCT
The disclosure relates to a process for producing a confectionery product comprising heat resistant chocolate or a heat resistant compound mass and to the confectionery product, which is produced by this process. The process utilizes spraying water and/or a polyol (such as a sugar alcohol or a sugar) solution onto chocolate or a compound mass thereby inducing the formation of heat resistant chocolate or a heat resistant compound mass.
EMULSION AND PROCESS FOR MAKING SAME
The present invention relates to a stable emulsion of an aqueous phase in a lipid phase wherein non-fatty cocoa solids and/or non-fatty milk solids are present in the lipid phase, and wherein the emulsion has an improved pick-up behaviour. The present invention further relates to a process for making an emulsion and to uses thereof, especially in food products.
COCOA PRODUCTS BASED ON UNFERMENTED COCOA BEANS AND METHODS FOR PREPARING THE SAME
Disclosed is a method for processing unfermented cocoa beans, comprising the steps of: (a) adding water to said unfermented cocoa beans to form a suspension; (b) wet grinding said suspension; (c) subjecting said suspension to a heat treatment at a temperature of 70? C. or less; (d) separating the suspension into a water phase (heavy phase), a fat phase (light phase) and a solid phase, said fat phase comprising cocoa butter as a major component and solids and/or water as minor components and said solid phase comprising cocoa powder and water; and (e) separately processing the three phases, which optionally comprises: separating cocoa butter from the fat phase, separating cocoa powder from the solid phase, and separating cocoa aroma and a polyphenolic powder from at least the water phase. Further disclosed are methods of manufacturing of a cocoa product construction kit and chocolate or chocolate-like products comprising high amounts of nutritionally beneficial and useful components of the cocoa fruit, such as e.g. polyphenols, antioxidants, vitamins and/or sugars, making use of the above technique.

Described herein is a confectionery product (10) having a hollow body (10A) formed by at least one first material that defines an outer surface of said product, wherein present on the outer surface is a second material, different from said first material, which reproduces a decorative element.
The product is characterized in that said body comprises a first outer layer (20), formed by said first material, which comes to define a prevalent portion of said outer surface, and a second layer (22), formed by said second material, which is set internally, on said first layer, wherein said first layer (20) has an opening (20) that allows a portion (22A) of said second layer to emerge on said outer surface so as to form said decorative element.
