A method having the following steps: (1) providing a composition containing proteins and amino acids from mucous membranes of animals for slaughter, inorganic salts and water, wherein the sum of the mass of proteins and amino acids in the dry mass of said composition is 30 to 70 weight percent and the mass of inorganic salts in the dry mass of said composition is at least 7.5 weight percent; (2) filtering the composition to obtain a filtrate and a filter cake; (3) cooling the filtrate to a temperature in the range of 15? The present invention provides methods for extraction of amino acid-rich fractions from keratin-containing biological materials, and to amino acid-rich protein fractions generated by the methods described herein. The methods involve forming a reaction mixture with keratin containing material at a pH of 1.1 to 6.9. The reaction mixture is exposed to an energy source, such as microwaves, sufficient to degrade the keratin. The amino acid mixture which is subsequently extracted is substantially insoluble.
