A method for protein isolation as a co-product of alcohol production is disclosed. The method includes receiving grain product at a holding receptacle, the grain product being at least one of whole stillage, dried distillers grain, and wet distillers grain. The method further includes directing the grain product from the holding receptacle over a plurality of screens, thereby allowing a fiber-containing portion to be collected on the screens and further allowing a protein-containing portion and an oil-containing portion to pass through the screens. The method further includes directing the protein-containing portion and the oil-containing portion optionally over a finishing screen, thereby allowing remaining fiber fractions to be collected on the finishing screen and further allowing the protein-containing and oil-containing portion to pass through the finishing screen. Further, the method includes centrifuging the protein-containing portion and the oil-containing portion for isolating a protein fraction and an oil, water, sugar and minerals fraction.

The present technology generally relates to food-processing industry, namely to a method of processing brewer's grains. The invention enables to increase the level of extracted food fractions of brewer's grains up to 90-95% and to increase protein content in barley protein concentrate up to 50-65% wt (dry solid). The method implies that brewer's grains are subject to loosening by means of a vibrating screen, grinding in a colloid mill with addition of water or centrate in the ratio from 0.5:1 to 1:1 to brewer's grains in order to produce a pasty homogeneous mass from brewer's grains; and then this mass is subject to processing by means of a screw extractor for its further grinding and division into 2 factions: suspension with the humidity level of 90-95%, and ground husk of brewer's grains with the humidity level of 60-75% suitable for its further industrial use. Then the suspension is supplied to mechanical filtration in order to remove the ground husk, pumped into the container and dried in order to obtain the humidity level of max. 7%.

Provided is a method to prepare a protein food product based on solid state fermentation, which includes the steps of preparing a sterilized substrate comprising a grain such as rice or quinoa and a plant protein concentrate or isolate such as pea protein, inoculating the sterilized substrate with a filamentous fungal culture such as Morchella esculenta culture, and culturing the filamentous fungal culture in the substrate, resulting in a myceliated substrate that has texture more similar to meat and/or improved flavor and aroma when cooked as compared to control substrate (e.g., unmyceliated). Similarity in texture to cooked meat includes increased spring and cohesiveness on chewing, and also where the protein food product, and the improved flavor includes increased savory and umami and decreased bitterness and improved aroma includes decreased pea or beany aroma. Also provided are protein food products made by the methods provided and food compositions, for example, meat analog products, made using the methods and compositions provided.

The group of inventions relates to the food industry, and more particularly to a method and device for transforming brewer's spent grain (BSG). The invention makes it possible to increase the level of recovery of edible fractions from BSG to 90-95%, and to increase the amount of protein in an edible suspension to not less than 50 wt % dry solids. The underlying principle of the invention is a technique for preparing BSG for nutrient extraction and extracting said nutrients by mechanical processing on a proposed industrial processing line. The essence of the claimed method lies in loosening BSG on a vibratory sieve, grinding the BSG in a colloid mill with the addition of water or centrate in a ratio of from 0.5:1 to 1:1 relative to BSG to produce a paste-like homogeneous mass of BSG, and then processing said mass in a screw extractor for further grinding and separation into two fractions: an edible suspension having a 90-95% moisture content and containing all of the nutrients of BSG, including protein substances; and ground BSG husks having a 60-75% moisture content, suitable for subsequent industrial use. The edible suspension is then mechanically filtered to remove ground husk residue, and the suspension is pumped into a storage tank.
