STARCH-FREE BAKED FOODS AND METHODS OF MAKING
Starch-free baked comestible goods and aqueous slurries (batters) for preparation of starch-free baked comestible goods include a combination of three different protein components that are protein concentrates or protein isolates, wherein the protein components differ by solubility in water and/or particle size when suspended in an aqueous medium. The combination of three protein components, particularly in certain weight ratios, enables the preparation of starch-free baked comestible goods including doughnuts, muffins, cakes, and bars as well as other commonly recognized desirable comestible formats. The starch-free baked comestible goods have an improved texture and extended shelf-life as compared to previously developed starch-free baked comestible goods.
Methods for extracting milk protein from expired or spoiled milk
Methods for extracting protein from expired or spoiled milk is disclosed. In at least one embodiment, the method includes the steps of acid hydrolysis, first filtration, fine filtration, activation, salting out, degreasing, drying and packaging. Through the combined process of “protein activation” and “self-assembly salting out,” these methods enable the reuse and upcycling of expired and spoiled milk.

Native whey protein for improving intestinal maturation
The invention concerns native whey protein for use in (a) improving intestinal maturation; and/or (b) reducing and/or preventing intestinal permeability. The inventors found that native whey protein provides a beneficial effect on intestinal maturation and permeability.
Methods for casein production
Embodiments of the invention are directed to a process involving microfiltration of milk, providing a product that is useful as a source of casein and another product that is useful as a source of whey protein. Another embodiment of the invention is directed to preparing milk products like casein, dairy beverages, milk protein concentrates and cheese from microfiltration retentate.

FORTIFIED MILK COMPOSITIONS AND THEIR PROCESSES OF PREPARATION
The present invention provides a novel process for preparing fortified milk compositions from whole mammalian milk. The process of the present invention generally involves converting dried mammalian milk into a fats-enriched fraction, a protein-enriched fraction, and a carbohydrate-enriched fraction. The process comprises treating the dried milk with a fats extracting agent to provide a fats-enriched fraction, and a residual fraction comprising proteins and carbohydrates; separating said fats-enriched fraction from the residual fraction; and removing the fats extracting agent from the separated fats-enriched fraction to produce a dry fraction of oily, fats-enriched material and a fraction enriched in proteins and carbohydrates.
Method for preparing a complete protein and uses thereof
A method of preparing a complete protein by the addition of essential amino acids to an incomplete protein can include calculating an amount of each essential amino acid to be added to an incomplete protein and adding the calculated amount of each essential amino acid to the incomplete protein. The calculations can be done using a particular equation, described herein.
PROCESS FOR SEPARATING COMPONENTS OF SKIM MILK
This invention relates to a process for separating components of skim milk, in particular to the extraction of milk proteins and lactose from skim milk powder. The method involves combining skim milk powder with water, raising the temperature of the resulting mixture followed by cooling the mixture to produce a viscous casein fraction and a less viscous lactose fraction, and then separating the two fractions with optional purification.
