GASIFIED SOLUTIONS WITH IMPROVED SENSORY PROPERTIES
This disclosure sets forth bubble modifiers capable of reducing mean bubble diameter of a gasified aqueous solution, e.g., a carbonated beverage. The bubble modifier may include one or more compounds selected from the group consisting of monocaffeoylquinic acids, dicaffeoylquinic acids, monoferuloylquinic acids, diferuloylquinic acids, monocoumaroylquinic acids, dicoumaroylquinic acids, and salts thereof. The bubble modifier desirably comprises less than 0.3% (wt) of malonate, malonic acid, oxalate, oxalic acid, lactate, lactic acid, succinate, succinic acid, malate, or malic acid; or less than 0.05% (wt) of pyruvate, pyruvic acid, fumarate, fumaric acid, tartrate, tartaric acid, sorbate, sorbic acid, acetate, or acetic acid; or less than about 0.05% (wt) of chlorophyll; or less than about 0.1% (wt) of furans, furan-containing chemicals, theobromine, theophylline, or trigonelline.
BEVERAGE DISPENSER HEAD FOR MIXING CONCENTRATE, DILUENT AND ADDITIVE
A dispenser head for in-line mixing and dispensing of beverages, which may be carbonated or nitrogenated. The dispenser head comprising a pump, a dilution mechanism, an additive mechanism, and outlet nozzle and optionally a regulation system. In use, the pump can pump concentrate liquid for the liquid product from a concentrate source to the dilution mechanism; the dilution mechanism can receive diluent liquid suitable for the liquid product from a diluent source, operable to mix the diluent liquid and the concentrate liquid and provide diluted concentrate liquid; and the additive mechanism can receive additive fluid for the liquid product from an additive source, to combine the diluted concentrate liquid and the additive fluid. The regulation system comprises a pump regulator means for regulating the quantity of concentrate liquid pumped into the dilution mechanism within the dispense period; a diluent quantity regulator means for regulating the flow of diluent liquid into the dilution mechanism; and an additive quantity regulator means for regulating the flow of additive fluid into the additive mechanism. Preferably, the dispenser head is a unitary device, which may be supplied attached to a vessel containing the concentrate.

BREWABLE BEVERAGE IN A COLD LIQUID WITH CONTROLLED EFFERVESCENCE
A composition for infusion in a cold liquid, a substitute for tonic, without gas or added sugars, including at least one sweetening compound in a percentage of less than three percent weight for weight of the dry composition, at least one flavoring compound in a percentage of less than fifty percent weight for weight of the dry composition and at least one effervescent compound in a percentage equal to or above fifty percent weight for weight of the dry composition.

FOAM FORMULA AND DISPENSING APPARATUS
A liquid foam composition and a foam dispenser. The liquid foam composition includes a combination of water, a surfactant, and a emulsifier. The foam dispenser includes a container containing the liquid foam composition. The foam dispenser further includes a foam dispensing pump having mesh within a liquid passage, a closure securing the foam dispensing pump assembly within the container, and a nozzle operably connected to the foam dispensing pump and extending from the closure. The nozzle is fluidly connected to the liquid passage.
WIDGETLESS CANNED NITROGEN INFUSED BEVERAGES
Disclosed herein are non-alcoholic nitrogen infused beverages and method for producing such beverages. The processes described herein comprise producing a mixed gas beverage supported with a foaming agent. Liquid nitrogen and carbon dioxide are added to the beverage, with the addition of a foaming agent, such as soapbark extract. In some embodiments, this process provides a nitrogen infused beverage with foaming and cascading capabilities that are equivalent to a nitro experience delivered through a widget can, without the need for the widget or the use of nitrous oxide.
Foaming pressurized beverage
A method of making a pressurized packaged liquid beverage including filling a container including a one-way valve with a liquid mixture including a base liquid and a gum; sealing the container; introducing a volume of gas through the one-way valve after sealing the container; and agitating the container. When the container is opened, the liquid mixture increases in volume and separates into a liquid phase and a drinkable foam phase, which may persist for an extended period of time. The base liquid includes milk, coffee, fruit juice, or mixtures thereof.
